Ingredients

to make the dough

  • 1 1/4 cup of hot water
  • 1 1/2 teaspoons extra virgin olive oil
  • 3 3/4 cup flour for bread
  • 1 pound dried instant yeast
  • a half teaspoon of salt

for the garnish

  • 1 finely sliced medium zucchini
  • 3 tablespoons extra virgin olive oil
  • 2 tsp. thyme (dried)
  • chia seeds, 3 teaspoons (or any other small seed)
  • 1 1/2 teaspoons sea salt, flakes
  • 1 teaspoon freshly ground black pepper
  • 1/2 cup parmesan cheese, grated

Instructions

  1. In the bowl of a stand mixer, combine flour and salt. Whisk together the warm water and yeast in a separate dish. Pour in the olive oil.
  2. Slowly add the wet ingredients to the dry components with the machine on low and a dough hook attachment. Increase the speed to medium when the dough starts to come together and continue to mix until the dough is glossy and smooth. If the dough isn’t coming together because it’s too moist, add 2 to 4 tablespoons more flour (stop the machine once to scrape sides if you need to).
  3. Turn the dough out onto a lightly floured surface and shape it into a smooth, round ball with your hands. Spray a large mixing bowl with nonstick cooking spray. Place the dough in the bowl and gently brush the top with nonstick spray. Using a clean dish towel, cover the bowl. Preheat your oven to 400°F and wait 1 minute for it to warm up. It should be turned off. Activate the oven light. Place the covered dough bowl in a preheated oven for 50 to 60 minutes, or until the dough has doubled in size.
  4. Preheat the oven to 400 degrees Fahrenheit. Spread the dough onto a cookie sheet with 1 inch sides that has been well-oiled. Dig into the dough with your fingertips to make little dimples. Brush half of the olive oil mixture onto the dough.
  5. Place the zucchini pieces on top of the dough in thin slices. Brush the remaining olive oil mixture over the zucchini and bread, then top with parmesan cheese. Bake for 10 minutes, or until golden brown on top.
