Have you ever had one of those weeks when you decide to eat healthy and purchase a lot of zucchini, promising yourself that you’ll eat zoodles all week? Then you decide to have pizza instead. I don’t know, maybe it’s just me. However, I can tell you that we have a lot of zucchini at our home. And what is the best way to prepare zucchini? Zucchini bread is a kind of bread made using zucchini. Duh.

To prepare zucchini bread, you’ll need the following ingredients.

  • Oil creates the moist, silky crumb that you remember from the greatest fast breads you’ve ever had. Any oil with a neutral taste would suffice–we normally use vegetable oil!
  • Sugar: This zucchini bread is just sweet enough to satisfy your sweet craving without making you feel guilty about eating it for breakfast.
  • Eggs: Make sure your eggs are at room temperature before blending them into the batter.
  • Crushed Pineapple: The key ingredient in this delectable zucchini bread recipe is crushed pineapple. It adds a touch of acidity to the mix, which aids in the rise and rounds out the taste profile!
  • Zucchini: Zucchini bread isn’t complete without it, and this recipe is no exception! Before adding the zucchini to the batter, shred it with a cheese grater and softly blot out any extra moisture with a paper towel.
  • We used all-purpose flour in this recipe, but you could use whole wheat or anything heartier instead!
  • Baking Powder AND Baking Soda: Using a mix of baking powder and soda will give you a lovely domed top and an even, fluffy rise.
  • Spices: Cinnamon and nutmeg combine to give this zucchini bread a warm, inviting taste that makes you want to cuddle up with a thick piece and a cup of tea!

Suggestions for the greatest zucchini bread

This simple zucchini bread recipe comes together in one dish (yay, easy cleaning), but follow these three guidelines to ensure a beautiful loaf!

  • Dry out the zucchini: Zucchini has a lot of moisture, which might make your zucchini bread batter excessively liquidy. Blot the zucchini with a paper towel before adding it to the batter! After shredding the zucchini, cover it with a paper towel. Gently squeezing the zucchini will help to remove some of the moisture!
  • Don’t skip the pineapple: Crushed pineapple adds a little tang, acidity, and sweetness to this homemade zucchini bread, deepening the taste profile!
  • Take your bread out before it’s completely done through since it will continue to bake as it cools. Using the correct baking time helps ensure that your bread stays moist and fluffy.

in order to make zucchini bread

  • a half cup of vegetable oil
  • 1 cup sugar (granulated)
  • 2 big room-temperature eggs
  • 1 teaspoon extract de vanille
  • 4 oz. pineapple, smashed and drained
  • 2 cups pressed zucchini grated
  • 2 1/4 cup flour (all-purpose)
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon powdered baking soda
  • 2 tsp cinnamon powder
  • nutmeg (1/2 teaspoon)
  • a half teaspoon of salt

for the streusel topping

  • 12 cup chopped walnuts
  • 2 tsp cinnamon, freshly ground
  • a third of a cup of all-purpose flour
  • 12 cup sugar (brown)
  • 14 cup chilled butter, sliced into tiny cubes

  1. Preheat the oven to 350 degrees Fahrenheit. Using parchment paper, line a regular 1 pound loaf pan. Remove from the equation.
  2. 1 minute in a large mixing basin, whisk the oil and sugar together. Add the eggs and vanilla essence and continue to beat for another minute. Combine the pineapple and zucchini in a mixing bowl.
  3. In a second dish, mix together the flour, baking soda, cinnamon, nutmeg, and salt. Combine the dry and wet ingredients in a mixing bowl.
  4. Place the chopped walnuts, cinnamon sticks, flour, and brown sugar in a food processor and pulse until the walnuts are finely chopped. Pulse in the butter until it is well distributed.
  5. Half of the batter should be poured into the pan, followed by half of the streusel. Squeeze the streusel between your hands until it’s as thick as wet sand, then sprinkle it over the batter. Pour in the remaining batter and sprinkle with the remaining streusel.
  6. Preheat oven to 350°F and bake for 50 minutes, or until a knife inserted in the middle comes out clean. Allow it cool for a few minutes before removing from the pan.
