Whole wheat apple cinnamon coffee cake

This recipe is a healthier version of the traditional coffee cake loaded with whole grains, healthy fats and low on sugar. The cinnamon in this drink adds a subtle hint to apples that help you feel refreshed. Drink up!

My sister is pursuing a degree in environmental science. She is passionate about food justice, environmental sustainability, and recycling. It’s really amusing. But it’s all wonderful, right? But it’s quite crunchy. I admire her for it. Whole wheat flour is one of the things she’s particularly taken to. While white flour has a superior flavor (it’s a truth), whole wheat flour offers a lot more nutritious value. And, on occasion, it may even improve a recipe! To prepare this whole wheat apple cinnamon coffee cake, I went out and bought some whole wheat flour and tweaked an old family coffee cake recipe. It’s incredibly delicious, and I’m excited to try more whole wheat dishes in the future!!

Ingredients

for the icing

  • 3 cups flour (whole wheat) (I used King Arthur)
  • 1 1/2 pound of sugar
  • 2 teaspoons soda bicarbonate
  • 2 tablespoons powdered baking soda
  • 1 teaspoon kosher salt
  • 6 oz. unsalted butter (room temperature)
  • 3 eggs
  • 2 cups yogurt (plain)
  • 1 teaspoon extract de vanille
  • 2 peeled, cored, and thinly sliced green apples (1/4 centimeter thick)

to make the swirl:

  • 3/4 cup sugar (brown)
  • 1 teaspoon of cinnamon

 

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit. Brown sugar and cinnamon should be combined with a fork in a small bowl. Remove from the equation.
  2. Cream the butter and sugar together in a large mixing basin, then add the eggs, vanilla, and yogurt. Combine the flour, baking powder and soda, and salt in a separate basin. After the wet ingredients have been well combined, add the flour in stages to the wet ingredients, stirring after each addition. 
  3. A big bundt pan should be butter and floured. Pour half of the batter into the pan and top with half of the swirlies mixture. Push in swirlies with a fork to incorporate them into the batter. Half of the apple slices should be placed on top of the batter. Repeat with the remaining batter, distributing nearly all of the swirlies (leave 2 tablespoons) over the top and then the remaining apple slices. Over the apple slices, scatter the remaining swirlies. Bake for approximately 40 minutes, or until a knife inserted into the cake comes out clean. You may eat it directly out of the oven, or let it cool and keep it in the fridge for days!
