Ingredients

  • 2 cups flour (all-purpose)
  • 1/2 teaspoon bicarbonate of soda
  • a half teaspoon of salt
  • melted and chilled 12 tablespoons unsalted butter
  • 1 cup light brown sugar, packed
  • 1/2 cup sugar (granulated)
  • a single huge egg
  • 1 big yolk of an egg
  • vanilla extract (two tablespoons)
  • a half-cup of white chocolate chips
  • 1 cup macadamia nuts, chopped
  • 3/4 cup cranberries, dried

Instructions

  1. Preheat the oven to 325°F with an oven rack in the lower-middle position. Preheat oven to 350°F. Line two baking pans with parchment paper. In a medium saucepan, toast the macadamia nuts until golden brown, stirring periodically. Allow to cool fully before serving.
  2. Combine the flour, baking soda, and salt in a medium mixing basin.
  3. Separately, whisk the melted butter and sugars with an electric mixer on medium speed until smooth in a large mixing bowl. Combine the egg, egg yolk, and vanilla in a mixing bowl. Reduce the mixer’s speed to low and gradually add the flour mixture until everything is well blended. In a separate bowl, combine the white chocolate chips, dried cranberries, and macadamia nuts.
  4. Working with 2 tablespoons of dough at a time, flatten the dough into even balls and place them approximately 2 inches apart on the baking pans. Bake the cookies for approximately 16 minutes, or until the edges are firm and starting to brown but the interiors are still soft and fluffy. Allow 10 minutes for the cookies to cool on the baking sheet before serving warm or transferring to a wire rack to cool entirely.
