Sometimes all you want is a slice of pie. And sometimes you just want a pie that fits in your hand. These White Chocolate Blueberry Star Shaped Hand Pies are the result.

I had the pleasure to visit Kroger’s headquarters in Cincinnati, Ohio, for their annual Think Tank a few weeks ago. I spent the day learning about new Kroger initiatives, items coming out this year, and some fantastic new technology Kroger is starting to deploy in their stores (things like quick online purchasing, a ship-to-home service, and voice order technology!). I was joined by 15 other bloggers.

One of my favorite parts was witnessing how this big store is making significant social, environmental, and health-conscious strides. One wonderful example is Kroger’s Zero Hunger Zero Garbage campaign, a two-pronged strategy targeted at both community-driven hunger assistance for low-income Americans and enormous waste diversion from landfills throughout the corporation.

In terms of garbage, they’ve diverted 77 percent of it from landfills by implementing programs that recycle food waste by feeding it to animals and composting it. And today, 34 of Kroger’s 36 production sites are waste-free. In terms of hunger assistance, Kroger has contributed 325 million meals to those in their communities who are food insecure. Kroger shops have donated 91.2 million pounds of food to local food banks, with 99 percent of them participating.

–To be honest, I simply need to take a moment to express how much talking about this things makes me feel. Kroger didn’t ask me to speak about their programs, but I’m so pleased of what they’re doing that I feel compelled to share it with you. Despite the fact that about 40% of all food in the United States is wasted, 13% of Americans face food insecurity. So the fact that Kroger has not only recognized this, but is also taking massive measures to address these concerns, is simply amazing, and says volumes about what a great business they are.–

Later in the day, we bloggers had the opportunity to cook for 50 people in the Kroger corporate kitchen. I WAS EXTREMELY EXCITED ABOUT THIS, AFTER 8 YEARS OF WORKING IN RESTAURANTS. Each of us had the option of choosing our own food ahead of time.

Naturally, I went with dessert, and because the party was themed around a 4th of July picnic, I went with these White Chocolate Blueberry Star Shaped Hand Pies. To make them somewhat handmade but quick enough to whip together in an afternoon, I used pre-made Kroger brand pie crust and opted for a homemade blueberry jam center.

Kroger’s executives competed in a Chopped-style judgment competition before sitting down to supper. They tasted each meal, gave it a score, and chose a winner in each of the four categories: appetizers, sides, main courses, and desserts.

When it came time to assess the desserts, I thought to myself, “Lol, these hand pies shouldn’t even be judged.” They’re wonderful, but they’re just so basic. So I continued to savor my kombucha drink while stuffing my face with the incredible food blogger buffet. “The winner is… the White Chocolate Blueberry Star Shaped Hand Pies!” said the judges. I really chuckled a little and thought to myself, “Oh my God, really?” After that, I gathered myself, thanked the judges, and giggled a bit in my seat.

These Blueberry Star Shaped Hand Pies are, in fact, award-winning. They’d be ideal for a summer picnic, an outside BBQ, or wherever else you’d want to boast about making award-winning hand pies.

Ingredients

for the blueberry jam (homemade):

  • 1 pint blueberries, fresh
  • 1 cup sugar (granulated)
  • 1 lemon’s zest
  • lemon juice (two teaspoons)
  • a pinch of salt
  • 1 teaspoon extract de vanille
  • gelatin, 1/4 cup

for the hand pies in the form of stars:

  • 4-inch cookie cutter in the form of a star
  • Unroll & Bake 9-inch pie dough, 2 packets Simple Truth Organic
  • 1 egg
  • 1 teaspoon of water
  • 2 oz. chopped white chocolate

Instructions

  1. Cook the blueberries, sugar, lemon zest, lemon juice, and salt in a medium saucepan over medium heat until they boil. Once the mixture has to a boil, reduce the heat to low and continue to cook for 15-20 minutes, or until the blueberries have broken down and the sauce has thickened.
  2. Remove the jam from the heat and drain the bulk of the liquid out using a fine mesh strainer. Allow the bulk of the liquid to flow out on its own rather than pushing the jam through the mixture.
  3. In a mixing bowl, combine the strained jam, vanilla extract, and gelatin, and whisk to incorporate. Allow to chill to room temperature in the refrigerator.
  4. Preheat the oven to 425 degrees Fahrenheit. Preheat oven to 350°F. Line two large cookie sheets with parchment paper. Remove from the equation.
  5. Flour a work surface lightly. In a small bowl, whisk together the egg and the water.
  6. Roll out the pie dough and cut it into stars using a star-shaped cutter. Place dough on cookie sheet and gently brush with egg mixture. Fill each star with 2 tablespoons jam, then top with another star. Use a fork to make indentations around the edge of the stars by pressing each corner down slightly.
  7. Brush the remaining egg mixture over the tops of the stars, then poke a fork hole in each star to enable air to escape.
  8. Preheat oven to 350°F and bake for 13-15 minutes, or until golden brown.
  9. While the pies are baking, melt the white chocolate in 15 second intervals in the microwave, stirring after each heating.
  10. Allow pies to cool for 10 minutes after taking them out of the oven before spreading white chocolate on top!
