Watermelon Mojito Granita

It’s the frickin weekin, baby, to quote R. Kelly. I’m going to have a good time.

What you probably didn’t realize was that the quote didn’t finish there. I’m ready to have a lot of fun with Watermelon Mojito Granita, to be exact.

This is a true tale.

Aaaanyways. Today, I’m really thrilled to discuss a new opportunity/development in the Broma universe. But first, there’s the granita.

What Exactly Is Granita?

Granita is an Italian dessert prepared with frozen sugar and a flavoring, most often fruit. It’s similar to Italian ice, but with a lighter texture and less calories.

What are the ingredients that go into making granita?

A little sugar, lime, and mint, a solid pour of light rum, and two pints of watermelon are all you need to make this Watermelon Mojito Granita. Fin.

Unlike some other frozen sweets, this one has very little artificial sugar and is mostly watermelon puree.

This might be served in martini glasses, wine glasses, or tiny ramekins at the conclusion of a meal. The crystalline-like granita will dazzle your guests and family no matter how you serve it. Plus, slipping in a little liquor will make everyone even happier.

Now, on to the next piece of information! I’m beyond thrilled to announce that I’m now offering individual baking courses in the Boston region! And by Boston area, I mean if you want to fly me out to LA to bake with you, I’d be delighted.

It all began when a young lady contacted me and asked if she and her mother might join me for a baking session. I was overwhelmed with gratitude. They were in my kitchen in a couple of weeks, and we were baking like crazy. In two days, we produced eight Broma dishes, and on top of that, the mother created her family’s flan recipe, which was wild. In less than two days, it was gone from our refrigerator. Swoon!

I’m getting off track here. I told them over and again that it was such a delight to be able to bake alongside others. That sparked a conversation about how I might sell private courses, and the concept was formed.

Ingredients

  • 1 bouquet of mint leaves (about 40 leaves)
  • 1 pound of sugar
  • 1/2 cup rum (light)
  • 8 cups diced seedless watermelon
  • lime juice from 2 limes
  • a half teaspoon of salt

Instructions

  1. Combine mint leaves, sugar, and rum in a small saucepan. Simmer over low heat until the liquid gently bubbles around the edges, then remove from heat and cool to room temperature.
  2. Meanwhile, dice the watermelon and combine it with the juice of two limes (1/3-1/2 cup) and salt in a blender.
  3. After the rum sugar mixture has cooled, pour it through a fine mesh strainer and save the liquid. To release the mint’s natural oils, squeeze it as hard as you can. In a blender, combine the rum sugar that has been drained.
  4. Mix everything for approximately a minute on high speed, until everything is smooth and no solid chunks remain. Place in the freezer after pouring onto a big sheet pan.
  5. Remove the mixture from the freezer after an hour and whisk everything together with a fork. Return the mixture to the freezer and scrape it every half hour until it is totally frozen (it took mine about 3 hours).
  6. Wrap the dish in plastic wrap until ready to serve! Will keep for 1-2 days in the freezer.
