If you like vanilla cake, you will almost certainly — no, almost certainly – like this dessert. Vanilla has always been, and will always be, my birthday cake of choice, and you can know it’ll be slathered with handmade chocolate buttercream. Duh.


My mother was renowned for baking the nicest vanilla cake I’d ever tasted when I was a kid. She appeared to create every birthday cake for every kid I knew, so she was a bit of a celebrity. But when it came time for my birthday, I had something else in mind. When my mother inquired what sort of cake I wanted for my seventh birthday, I answered with all the tact of a second grader:

“I’m not a fan of your cake.”

To make things worse, I then ordered a particular cake cooked by someone else, which was likely a stab in the heart of my poor mother. Especially when the cake I gushed about was from Shaw’s, the grocery shop.


Clearly, I had a well-honed sense of taste.

for the icing

  • 1 recipe of the finest vanilla cake ever (for a four-layer cake, double the recipe by 1.5 for thin layers and 2 for thick layers, then split amongst four pans!)

for the cream cheese icing

  • 1 1/2 cups room temperature unsalted butter
  • 3 1/2 CUP SUGAR (POWDERED) (about 1 box)
  • 1 cup cocoa powder, unsweetened
  • 1/2 gallon of whole milk
  • a half teaspoon of salt
  • vanilla extract (two tablespoons)


for the icing

  1. Make the finest vanilla cake you’ve ever tasted. Remove the cakes from the pans and set them aside to cool fully before frosting*.

for the cream cheese icing

  1. For 2-3 minutes, cream the butter and cocoa powder together until the cocoa powder lightens in color. 1 minute after adding the powdered sugar, milk, vanilla extract, and salt, beat until light and fluffy.
  2. Place the first cake on a cake stand and cover with a thick layer of frosting. Frost the second and third layers with the same quantity of frosting. With the remaining frosting, frost the cake’s edges. Add flowers, sprinkles, or anything else your heart wishes on the top. Any day is a good day!

*TIP: Before icing, we prefer to freeze or chill our cakes. This makes the frosting process lot simpler and more durable, as well as preventing crumbs from getting into your buttercream!
