  • 1 1/2 pound thighs of chicken
  • 1 1/2 cups finely chopped celery
  • 1 cup finely sliced onion, chopped finely
  • 3 garlic cloves, minced
  • 1 pound sourdough bread, cut into 1 inch cubes
  • 1/2 cup coarsely chopped dried cherries
  • 1/2 cup walnuts, chopped
  • 2 teaspoons chopped fresh sage
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh rosemary
  • 1/2 a glass of white wine
  • 2 beaten eggs
  • 2 1/2 quarts chicken stock
  • 1 teaspoon kosher salt
  • a quarter teaspoon of black pepper


  1. Over medium heat, heat a large skillet. Season the chicken thighs generously with salt and pepper. Cook chicken thighs in a pan with olive oil until thoroughly done, approximately 7 minutes on one side and 3 minutes on the other. Place the chicken on a big dish. Allow it cool for a few minutes before cutting into 3/4-inch pieces.
  2. Preheat the oven to 350 degrees Fahrenheit. A big pie plate or baking tray should be greased.
  3. Cook the celery, onion, and garlic in the chicken pan until transparent, approximately 8 minutes. Remove from the heat and transfer to a large mixing bowl. Toss together the chicken, cubed sourdough, dried cherries, walnuts, and herbs.
  4. Stir gently to mix the white wine, eggs, chicken broth, salt, and pepper. Bake for 45 minutes in the baking pan that has been prepared. Gently toss the filling halfway through cooking so that the crunchy portion gets to the centre and the middle goes to the outer.
  5. Remove from the oven and serve right away!
