This triple chocolate fudge pie has a habit of vanishing in less than 24 hours. When I was in high school, my mother began preparing a variant of this chocolate pie. We made this pie whenever someone wanted smooth, fudgy chocolate, and it rapidly became a revolving fixture in our kitchen.

Ingredients

to make the crust

  • 1 1/2 cups wafer cookies (chocolate)
  • 6 teaspoons melted butter

in order to make the fudge pie

  • 6 ounces chopped semisweet or bittersweet chocolate
  • 6 tbsp. butter, chopped into small pieces
  • 1/2 teaspoon coffee powder (instant)
  • 3/4 cup brown sugar (medium or dark)
  • 3 eggs (big)
  • a half teaspoon of salt
  • 1 teaspoon extract de vanille

to make the whipped cream icing

  • 1 cup heavy cream (whipped)
  • 2 tblsp sugar (powdered)
  • shaved bittersweet chocolate

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Using butter, grease a large pie pan.
  2. Pulse chocolate wafer cookies in a standing mixer or food processor until only fine crumbs remain.
  3. Pulse in the melted butter until it’s all combined. Set aside the crust once it has been uniformly distributed in the pie pan.
  4. Melt the chocolate, butter, and coffee powder in a small saucepan over low heat. Allow to cool before serving.
  5. Beat the brown sugar, eggs, salt, and vanilla extract on high speed with an electric mixer until light and fluffy, approximately 4 to 5 minutes. When the melted chocolate mixture has somewhat cooled, gently add it into the egg mixture, beating constantly. Allow an extra minute to ensure that everything is in sync.
  6. Pour batter into prepared crust and bake for 20 to 25 minutes, or until puffed and starting to crack around the edges. Allow to cool for 30 minutes before chilling until ready to serve.
  7. The heavy cream and powdered sugar should be whisked together until soft peaks form. Sprinkle shaved bittersweet chocolate over the top of the pie.
