When the brownies came out of the oven, I was still unhappy and skeptical. On my way to yoga, I decided to let them cool a little, chop them up, and drop off practically all of them with our neighbors. I told them I screwed things up and that I wouldn’t be upset if they didn’t like them. I had a terrific yoga practice and then went back home, still annoyed because I had baked a large batch of brownies and they had failed miserably.

But here’s the kicker: I went inside and into our kitchen, ready to eat anything since I was starving, and bit into one of the remaining brownies. “Holy S**t!” screams the crowd. These are incredible!” Basically, after the brownies were entirely cold, they had a strong chocolate taste and managed to maintain moisture despite their minor cakey texture.

Although I say cakey, these brownies aren’t light and fluffy. They have a solid, cakey texture. As if cakey had married fudgy and given birth to a lovely, adorable kid. They rapidly melt in your tongue and have a very distinctive feel. You’ll have to test them out for yourself.

Ingredients

  • Chop 4 ounces bittersweet chocolate
  • 12 tbsp. melted butter, cut into tiny cubes
  • 3 eggs
  • 1 cup sugar (granulated)
  • 1/2 cup brown sugar (light)
  • vanilla extract (two tablespoons)
  • 1 teaspoon of coffee
  • 1/2 gallon of whole milk
  • 1 pound of flour
  • cocoa powder (1 cup)
  • 1/2 teaspoon bicarbonate of soda
  • 1 teaspoon kosher salt
  • 1 cup chocolate chips (bittersweet)
  • sprinkle with sea salt (optional)

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Set aside a 9×13 baking pan lined with parchment paper.
  2. Combine the bittersweet chocolate and butter in a microwave-safe mixing dish. Stir to incorporate, then microwave for 30 seconds at a time, stirring after each interval, until the mixture is fully melted. To aid the melting process, stir briskly with a fork or whisk in between each interval.
  3. Once the chocolate has melted, whisk in the sugars, milk, coffee, vanilla extract, and eggs until well blended (make sure the chocolate mixture has cooled somewhat to avoid cooking the eggs!). If your chocolate mixture is hot, toss in everything but the eggs first to cool it down, then add the eggs second).
  4. Stir in the flour, cocoa powder, baking soda, and salt until everything is just mixed. Finally, whisk in the bittersweet chocolate chips until they are evenly distributed.
  5. Cook for about 30 minutes* on a prepared baking pan. If using sea salt, sprinkle it over the brownies after they’ve been taken from the oven. Allow 10 minutes for cooling before cutting!
