So, I’m surprised I haven’t done this before. Come on, Sarah, a smores brownie recipe. Duh. These smores brownies were a fantastic way to bring summer into the colder months. In the midst of December, who doesn’t desire a fluffy marshmallow-topped brownie?

The most spectacular Smores Brownies ever: a fudgy dark chocolate brownie on a graham cracker crust with a thick coating of toasted marshmallow fluff.

  • 6 sheets of graham cracker
  • 3/4 cup melted butter
  • 1 cup chocolate chips (bittersweet)
  • 1 1/3 cup sugar, granulated
  • 2 room temperature eggs
  • 1/2 cup flour (all-purpose)
  • cocoa powder (1/2 cup)
  • 1 teaspoon extract de vanille
  • a half teaspoon of salt
  • 1 teaspoon powdered espresso
  • 7.5 ounces marshmallow fluff (or 15 ounces if you’re feeling extra generous)


  1. Preheat the oven to 350 degrees Fahrenheit. Line an 8′′x8′′ baking sheet with parchment paper, then butter or spray the bottom. On the bottom of the pan, arrange graham crackers in a single layer. Remove from the equation.
  2. Melt the butter in a microwave-safe bowl. Remove from microwave and add bittersweet chocolate to the mixture.
  3. Microwave for another 20-30 seconds. This should thoroughly melt the chocolate. If it still doesn’t work, microwave it for another 15 seconds.
  4. Whisk together sugar and eggs in a separate basin. Whisk in the melted chocolate mixture slowly, then use a spatula to fold in the flower, cocoa powder, vanilla extract, salt, and espresso powder.
  5. Pour the batter into the pan that has been prepared. Remove from the oven after 25 minutes and top with fluff. Return the fluff to the oven for another 10 minutes, or until it has become a lovely golden brown color.
  6. Remove from pan and cool fully before cutting into 9 big squares.
