You may replace the chocolate chips and walnuts with sprinkles, toffee bits, peanut butter swirls, or whatever your favorite cookie stir-in is! Here’s your shopping list, if you’re a purist like me:

  • Unsalted Butter: When you use unsalted butter, you have complete control over the quantity of salt in your cookies.

Ingredients

  • 1 1/4 cup butter (unsalted)
  • 1 1/2 cup packed brown sugar
  • 1/2 cup sugar (granulated)
  • 2 egg yolks + 2 egg whites, at room temperature
  • 1 tbsp extract de vanille
  • 3 cups flour (all-purpose)
  • 1 teaspoon bicarbonate of soda
  • baking powder (1/2 teaspoon)
  • 1 teaspoon salt + a pinch of salt for sprinkling
  • 3 cups chopped semisweet chocolate
  • 1/2 cup coarsely chopped walnuts

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and butter a 10 inch cast iron pan liberally. Remove from the equation.
  2. Combine the melted brown butter, brown sugar, and white sugar in a large mixing basin. Mix everything together until it’s smooth. Combine the eggs, egg yolk, and vanilla essence in a mixing bowl. Mix thoroughly.
  3. Combine the flour, salt, baking powder, and baking soda in a separate basin. Half of the dry ingredients should be mixed into the wet until everything is combined. Slowly incorporate the remaining flour, a little at a time, pausing if the dough becomes too dry. Combine the chocolate and walnuts in a mixing bowl. Don’t overmix the ingredients.
  4. Place the cookie dough in the preheated pan and flatten it down to form a uniform layer.
  5. Bake for 40 minutes at 350°F, or until the sides are golden brown and the center has risen up but is still very gooey.
  6. Allow for at least 15 minutes of cooling time before serving with vanilla ice cream. Warm is the best!
