Ingredients

  • a third of a cup of unsalted butter
  • 1 pound coarsely chopped bittersweet chocolate
  • 1 cup all-purpose flour, minus 2 teaspoons
  • a dozen big eggs
  • 2 cups brown sugar (light)
  • a half teaspoon of salt
  • 1 teaspoon extract de vanille

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Using parchment paper, line a 9′′x13′′ glass baking dish.
  2. Melt the butter in a small saucepan over low heat. Take the pan off the heat and add the chocolate. If the chocolate does not entirely melt due to the heat from the butter, return the pan to the heat for 10 seconds and stir until melted. Allow to cool before serving.
  3. In a small mixing bowl, sift the flour. Remove from the equation. Combine the eggs, sugar, salt, and vanilla in a medium mixing basin. 4 to 5 minutes on high speed with a mixer set with the whisk attachment, whip the mixture until it thickens and becomes pale in color, falling off the beater in a broad ribbon that folds back on itself and gently dissolves on the surface. Fold the cooled chocolate into the egg mixture using a rubber spatula. To avoid deflating the air that has been integrated into the eggs, add the flour and mix it in rapidly but gently with the rubber spatula.
  4. Pour the batter into the prepared dish and use a spatula to smooth the top. If you’re using nuts, make sure they’re uniformly distributed throughout the batter. Bake for approximately 25 minutes, or until the top is slightly cracked and tender to the touch. Place on a wire rack to cool fully.
  5. Cut into 12 squares, or whatever size you like, using a sharp knife. The brownies can keep for up to a week in an airtight container in a cold area.
