Tahini Toast!

Tahini is traditionally found in Middle Eastern cuisine. It’s a paste made from ground sesame seeds, which can be used to make healthy desserts like tahini toast!

The “savory tahini toast” is a sweet and savory breakfast that can be made in minutes. It’s perfect for a quick weekend breakfast or an easy weekday morning meal.

Finn, Heather’s boyfriend, is smitten with Sofra’s tahini toast. He was distraught, to say the least, when it was cancelled two months ago. Then one day, I got this message from Finn on Facebook:

               “Toast with tahini.” Since Sofra cancelled this, I’ve been a little disappointed. If you ever come upon the recipe and decide to make a living selling it — the toast, not the wine — 

               I’ll be your first through fifth buyer if you follow this recipe.

               Consider that for a moment.

How could I possibly say no to that? I had no choice but to create it. As a result, I went to Thao the Baker and obtained the recipe (sidenote: Thao the Baker is awesome). Heather got some Tahin Helvasi, and I went to Iggy’s to purchase the greatest brioche bread I could find, and voilà! Toast with tahini! It’s fantastic because it appeals to sweet tooths, salty tooths, and everyone in between. It’s carb-y, sugar-y, and protein-y (well, maybe not protein-y, but it’s something…), and it’s also a straight-up Sofra recipe! Let’s be honest, how often do you get to cook stuff from a Sofra recipe? Never, I’m sure. So let’s raise a glass to it!

Ingredients

to make a tahini spread

  • halva made with 1/2 cup tahini (like this Tahin Helvasi)
  • 2 teaspoons of sugar
  • 1/4 cup flour (all-purpose)
  • a half teaspoon of salt
  • 1 unsalted butter stick
  • 2 eggs

in exchange for the bread

  • 1 brioche loaf from a pullman

for the straightforward syrup

  • 2 lbs. sugar
  • 2 c. liquid

for the garnish

  • a third of a cup of sesame seeds
  • sprinkling sugar (confectioner’s sugar)

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Slice the brioche into 1 1/2-inch thick slices. About 8 of these large slices may be made from a standard-sized loaf. Remove from the equation.
  2. To make your simple syrup, add water and sugar in a medium saucepan. When the sugar crystals have fully dissolved in the water, the syrup is ready. Allow to cool slightly before serving.
  3. Combine the halva, sugar, flour, salt, butter, and eggs in a food processor and mix until smooth. Remove from the equation.
  4. Pour 1/4 cup simple syrup over each piece of bread using a cup measurer, coating the bread equally. Next, spread around 3 tablespoons of tahini distributed equally over each slice to coat. Finally, evenly distribute the sesame seeds over each slice. Bake for 30 minutes on one side on a well-greased cookie sheet, then turn and bake for another 30 minutes, if required. The idea is to make both sides golden brown and toasted. Allow it cool on a wire rack before dusting with confectioner’s sugar and serving!
