While a conventional chocolate chip banana bread is clearly great, there are times when you want to spice things up a little and try something new. We knew we had to bake a wonderfully moist, tahini banana bread when we spotted those bananas beginning to brown and a half jar of tahini in the cabinet. It’s gently nutty, salty-sweet, and oh-so-delicious. It’s going to be fantastic.

What exactly is tahini?

Tahini is gradually becoming one of the most popular meals in 2020. However, some of you may be wondering, “What is Tahini?” “I’m sure I’ve heard of it before, but what exactly is it?” Tahini is the paste made from sesame seeds. Assume you’re making peanut butter, but instead of peanuts, you’re using sesame seeds. Tahini is a common ingredient in Middle Eastern dishes, and you’ve probably eaten it without even realizing it. Tahini is often used in savory dishes like hummus, but it’s also a great addition to sweet pastries.

If you’ve had tahini previously and didn’t like for it, it’s likely that you had terrible tahini (which can occur!). Although good tahini is ultra-creamy and somewhat nutty, the supermarket sells a number of less-than-stellar tahini products. (Bad tahini tastes strangely dry and harsh.)

Ingredients

  • 3 medium overripe bananas, mashed
  • melted 1/2 cup unsalted butter
  • 3/4 cup sugar, granulated
  • a quarter cup of brown sugar
  • 2 room temperature eggs
  • 1 tbsp. tahini
  • a quarter teaspoon of baking soda
  • 1 teaspoon kosher salt
  • 1 1/4 cup flour (all-purpose)
  • 2 teaspoons tahini
  • 1 tbsp. cream (or milk)
  • 1 cup sugar (powdered)
  • a sprinkle of salt
  • Optional sesame seeds for garnish

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Set aside a 9 x 5 inch loaf pan that has been greased.
  2. Toss the mashed bananas with the melted butter in a large mixing basin and swirl to incorporate. Combine the brown sugar and white sugar in a mixing bowl. To mix the ingredients, whisk them together. Whisk together the tahini and eggs until well mixed.
  3. Combine the flour, baking soda, and salt in a separate basin. Combine the dry and wet ingredients in a mixing bowl. Make sure not to overmix! Place the batter in the prepared pan.
  4. Preheat oven to 350°F and bake for 50 minutes, or until a knife inserted in the middle comes out clean. Allow for 15 minutes of cooling time before removing from loaf pan.
  5. Make the glaze while the bread cools. Combine the tahini, milk, sugar, and salt in a small saucepan over medium heat and whisk constantly until smooth and no clumps of sugar remain. Pour the glaze over the heated bread and, if preferred, sprinkle with sesame seeds!

Notes

  • 1 cup of mashed bananas equals 3 mashed bananas!
  • If the top of the bread begins to brown too quickly, cover it with tinfoil and return it to the oven to complete baking.
