Sweet Potato Bundt Cake with Maple Icing

And this Sweet Potato Bundt Cake, topped with the most delectable maple glaze you’ll ever taste, is the ideal way to toast the arrival of the long weekend.

Don’t be put off if you don’t like sweet potatoes. A) I’m not sure how you don’t like sweet potatoes, but B) this sweet potato bundt cake isn’t sweet potato-flavored. It’s the most moist, delectable, autumnal, spiced bundt cake you’ve ever tasted.


You’re missing out if you’ve never tasted potatoes in baked products. The potato puree is incorporated immediately into the batter, adding moisture and silkiness to the batter in the same way as pumpkin puree does. The result is a dreamy, moist texture that elevates this sweet potato bundt cake to a whole new level.

It just has magical abilities. It was left out on the counter for a week, uncovered, and it was still damp seven days later. We may all credit potatoes for this feat of engineering.

for the bundt cake made with sweet potatoes

  • 1 cup pureed sweet potato
  • 1 cup sugar (granulated)
  • 2/3 cup extra virgin olive oil
  • 2 big room-temperature eggs
  • vanilla extract (two tablespoons)
  • a third cup Unbleached White All Purpose Flour from Bob’s Red Mill
  • 1 teaspoon powdered baking soda
  • 1 1/2 teaspoons bicarbonate of soda
  • ginger, 2 teaspoons
  • 2 tsp cinnamon powder
  • nutmeg (1/2 teaspoon)
  • a quarter teaspoon of garlic
  • a half teaspoon of salt

because of the maple glaze

  • milk (two tablespoons)
  • maple syrup (three tablespoons)
  • 2 c. sugar (powdered)
  • 1 teaspoon extract de vanille
  • cinnamon sprig
  • a sprinkle of salt


  1. Preheat the oven to 350 degrees Fahrenheit. Set aside a 1 pound bundt cake pan that has been greased.
  2. Mix the sweet potato puree, sugar, oil, eggs, and vanilla extract in a standing mixer equipped with a whisk attachment until thoroughly blended. Mix just until the flour, baking powder, baking soda, spices, and salt are mixed. Don’t overmix the ingredients.
  3. Bake for 45 minutes, or until a knife inserted into the center of the cake comes out largely clean!
  4. Allow 20 minutes for the cake to cool before removing it from the pan.
  5. Make the maple glaze while the cake cools. In a saucepan over medium heat, whisk together all glaze ingredients until smooth and no clumps of sugar remain. Remove from the equation.
  6.  Place the bundt cake on a serving platter and drizzle with the heated glaze. Enjoy with a sprinkling of crushed pecans or walnuts on top!
