Sweet Potato Bundt Cake with Maple Icing

A bundt cake combines three distinctly different flavors into one decadent dessert. The sweet potato gives the cake a light, moist texture and earthy flavor while adding moisture to the recipe. It also delivers antioxidants that help with brain health

The “sweet potato pound cake with caramel glaze” is a sweet and fluffy cake that is perfect for any occasion. The recipe uses ingredients such as sour cream, maple syrup, eggs, vanilla extract, and cinnamon.

Bundt cake with potatoes?! Whattttttttttttttttttttttttt

Don’t be put off if you don’t like sweet potatoes. A) I’m not sure how you don’t like sweet potatoes, but B) this sweet potato bundt cake isn’t sweet potato-flavored. It’s the most moist, delectable, autumnal, spiced bundt cake you’ve ever tasted.

You’re missing out if you’ve never tasted potatoes in baked products. The potato puree is incorporated immediately into the batter, adding moisture and silkiness to the batter in the same way as pumpkin puree does. The result is a dreamy, moist texture that elevates this sweet potato bundt cake to a whole new level.

It just has magical abilities. It was left out on the counter for a week, uncovered, and it was still damp seven days later. We may all credit potatoes for this feat of engineering.

I usually tell people that your recipes are only as excellent as the ingredients you use to prepare them. Bob’s Red Mill’s Unbleached White All-Purpose Flour is one ingredient we can always bank on for the tastiest baked products ever. We go through around 10 pounds of it every month while testing recipes.

No joke.

Bob’s Red Mill is well-known for their excellent speciality flours, oats, and gluten-free mixes, which I really like. But I also appreciate Bob’s excellent classic flours, such as all-purpose, whole wheat, and bread flour, which are milled from some of North America’s best wheat. I don’t put my gluten in the hands of anybody else.

What’s the deal with Sweet Potato Bundt Cake?

Bundt cakes are one of my favorite holiday desserts to create since they’re considerably simpler to make than a layer cake but yet look elegant enough to serve as a dessert table centerpiece. They’re also simple to slice and serve, as well as transport and store.

It’s also incredibly simple to consume. Jussayin’.

How to prepare sweet potato puree at home:

Whole Foods was the only place we could locate authentic sweet potato puree (in the baking section near the pumpkin puree if you’re searching for it there), and travelling to a specialist shop for one item might feel like a lot! But don’t worry–you can always create your own! You can have homemade sweet potato at your fingertips by pureeing a peeled and cooked sweet potato with 1 tablespoon of water.

Potatoes are also high in potassium. So, instead of vitamins, eat the whole sweet potato bundt cake.

Thank you very much.

Ingredients

for the bundt cake made with sweet potatoes

  • 1 cup pureed sweet potato
  • 1 cup sugar (granulated)
  • 2/3 cup extra virgin olive oil
  • 2 big room-temperature eggs
  • vanilla extract (two tablespoons)
  • a third cup Unbleached White All Purpose Flour from Bob’s Red Mill
  • 1 teaspoon powdered baking soda
  • 1 1/2 teaspoons bicarbonate of soda
  • ginger, 2 teaspoons
  • 2 tsp cinnamon powder
  • nutmeg (1/2 teaspoon)
  • a quarter teaspoon of garlic
  • a half teaspoon of salt

because of the maple glaze

  • milk (two tablespoons)
  • maple syrup (three tablespoons)
  • 2 c. sugar (powdered)
  • 1 teaspoon extract de vanille
  • cinnamon sprig
  • a sprinkle of salt

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Set aside a 1 pound bundt cake pan that has been greased.
  2. Mix the sweet potato puree, sugar, oil, eggs, and vanilla extract in a standing mixer equipped with a whisk attachment until thoroughly blended. Mix just until the flour, baking powder, baking soda, spices, and salt are mixed. Don’t overmix the ingredients.
  3. Bake for 45 minutes, or until a knife inserted into the center of the cake comes out largely clean!
  4. Allow 20 minutes for the cake to cool before removing it from the pan.
  5. Make the maple glaze while the cake cools. In a saucepan over medium heat, whisk together all glaze ingredients until smooth and no clumps of sugar remain. Remove from the equation.
  6.  Place the bundt cake on a serving platter and drizzle with the heated glaze. Enjoy with a sprinkling of crushed pecans or walnuts on top!
