Strawberry Nutella Pop Tarts

Good morning, everyone, and have a wonderful Sunday! I’m making strawberry nutella poptarts this morning. How adorable are they? Homemade and flaky croissants packed with strawberry preserves and nutella. Mmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm They resemble Homer Simpson doughnuts, according to Alex. I burst out laughing.

I’m so pleased to offer these poptarts that I don’t know what to say about them. They’re incredible, aren’t they? I’ve already consumed two. Whoops. 

For me, the ideal Sunday consists of a delicious baked item and a cup of coffee. In my perspective, there’s a clear difference between ordinary baked goods and Sunday morning baked goods. Brownies? A typical baked good. Buns that are sticky? For sure, a Sunday morning baked good. Banana bread, perhaps? Regular. Pop tart with strawberry nutella? Well, of course.

Ingredients

The dough for the pastry

  • 2 cups flour (all-purpose)
  • a quarter cup of granulated sugar
  • a quarter cup of light brown sugar
  • 1 teaspoon of salt
  • 3/4 cup unsalted butter, cut into pea-sized pieces and cooled
  • cold 1/4 cup coconut oil (or veggie shortening)
  • ice cold water (approximately 4–5 teaspoons)
  • 1 egg (to make an eggwash)

To make the filling

  • strawberry preserves (1/2 cup)
  • Nutella (1/2 cup)

To make the frosting

  • 1 cup sugar (powdered)
  • heavy cream, 2–3 teaspoons
  • vanilla extract (1/2 teaspoon)
  • a couple of drops of red food coloring (optional)
  • jimmies in a rainbow of colors

Instructions

Make the dough ahead of time.

  1. Pulse the flour, sugars, and salt together in a food processor*. Pulse in the cooled butter and coconut oil until the mixture resembles coarse crumbs once more.
  2. Pour into a large mixing basin and add the ice water gently (1 tablespoon at a time), combining with your hands in between additions. Working quickly will prevent the butter and oil from melting into the dough. It’s your mission to keep everything as cool as possible. Once the dough has come together, stop adding water.
  3. Wrap the dough in plastic wrap and divide it into two oval disks. Allow to cool for at least 2 hours or overnight in the refrigerator.

To make the poptarts, combine the ingredients in a large mixing bowl.

  1. Take one of the doughs out of the refrigerator. Cover a work area with a big piece of saran wrap, then dust it with flour. A rolling pin should be dusted with flour. Roll out the dough into a 10′′x13′′ rectangle rapidly over saran wrap. It’ll be challenging, and the dough will be incredibly thin, but you’ll be able to accomplish it! If your dough starts to crack, a drop of water may be used to re-seal it.
  2. Cut your 10′′x13′′ rectangle into a precise 9′′x12′′ rectangle using a ruler and a pizza dough cutter. Then, cut your rectangle into nine 3′′x4′′ pieces.
  3. To carefully remove the 3′′x4′′ rectangles from their position, lift a corner of the saran wrap away from your work area. Place the rectangles on a large, parchment-lined baking sheet with as little as 1/2 inch between them. Place the baking sheet in the freezer after all 9 rectangles have been transferred onto it, and then repeat the rolling and cutting procedure with the second half of the dough (with a fresh piece of saran wrap, of course!).
  4. Preheat your oven to 350°F after all of your dough has been sliced.
  5. Taking the baking sheet out of the freezer is a good idea. To make an eggwash, whisk together one egg and 1 tablespoon of water. Apply the wash to each of your 9 poptart bases. This will aid in the dough’s adhesion!
  6. Put the preserves and nutella on the counter. 2 tablespoons preserves, spooned into the middle of each poptart base There’s no reason to disperse it. On top, spoon the equal quantity of nutella.
  7. Cover the base and contents of the poptart with the remaining dough, like a blanket. To help bind the dough together, gently press down with your fingertips. Then, using a fork, make indentations all the way around the poptart.
  8. Brush the remaining eggwash over the poptarts, then poke tiny airholes in the tops with your fork. Allow to cool entirely after baking for 30 minutes.

Prepare the frosting.

  1. Make your frosting while the poptarts are baking! 1 tablespoon of heavy cream at a time, whisk together the powdered sugar, vanilla extract, and heavy cream. You want a thick, spreadable consistency (that doesn’t seem grainy at all). If using, add the food coloring. Spread the frosting over the poptarts after they’ve totally cooled, then top with jimmies!

Notes

*What if you don’t have access to a food processor? Don’t be concerned! Using two forks, cut the butter and coconut oil into the flour mixture. It will take a little longer, but it will suffice. The consistency should be similar to coarse crumbs.
