One of my favorite French desserts is a strawberry crepe. There are multiple ways to make the dessert, but I will focus on one specific recipe. This particular recipe calls for an easy-to-make batter that’s mixed together with a bit of sugar and oil, then poured into round panes about four inches in diameter and two or three millimeters thick. The batter is cooked over medium heat until it puffs up nicely around the edges, which you’ll see when your crepes come out from behind the griddle – this only takes about 45 seconds per side!   • 4 room temperature eggs
  • melted 3 tablespoons unsalted butter
  • 2 1/4 gallon milk
  • 2 cups flour (all-purpose)
  • 3 teaspoons of sugar
  • 1 teaspoon extract de vanille
  • 1 teaspoon of salt

  • 1 cup heavy cream (whipped)


  1. Spray a medium frying pan liberally with cooking spray and place it over medium heat to warm up.
  2. Make the crepe batter while the pan heats up. In a high-powered blender, combine the eggs, melted butter, milk, flour, sugar, vanilla, and salt and mix until smooth. Don’t overmix the ingredients.
  3. Drop the crepe batter into the heating skillet using a 14 cup measure. As soon as the batter reaches the middle of the pan, remove it from the heat and roll it in a circular motion to ensure that the batter is uniformly distributed throughout the skillet and forms a tin circle.
  4. Cook for approximately 30 seconds, or until the crepe starts to bubble around the edges and changes from a glossy to a matte finish. Flip the crepe over with a spatula and cook for about 30 seconds on the other side. Place the crepe on a drying rack to finish drying. Carry on with the remaining crepes in the same manner.
  5. Whisk the heavy whipping cream in a stand mixer fitted with the whisky attachment until it forms soft peaks and is light and fluffy.
  6. To serve the crepes, put a huge dollop of whipped cream and a heaping spoonful of Bonne Maman INTENSE Strawberry Fruit Spread over one side of the circular. Fold the crepe in thirds to make a triangle. For the ultimate morning delight, dust with powdered sugar and drizzle with maple syrup.
