  • Salt: Good pizza has a salty flavor. I’m going to say it. The taste of this handmade crust will be enhanced by the sourdough starter, but salt will help to smooth out the flavor and avoid a boring crust.
  • Use your favorite tomato sauce recipe! For a 15-inch pizza, you’ll need 1 cup!
  • Fresh Mozzarella: Keep it simple and fresh if you want your pizza to be really gourmet. Instead of shredded mozzarella, use a fresh ball of the stuff!

  • Don’t be afraid of the dough’s stickiness: Don’t be intimidated by the moist dough; sourdough is a living, active yeast.   • 2 cups all-purpose flour (300 grams)
  • 200 gram (1 cup) water
  • 1 teaspoon kosher salt
  • a quarter teaspoon of dried active yeast
  • 1/4 cup unfed sourdough starter
  • 1 quart of tomato sauce
  • 8 oz. mozzarella cheese, fresh
  • basil leaves, if desired

  1. Before measuring out 1/4 cup* of your unfed sourdough starter, stir it well to include any moisture on the top. In a stand mixer fitted with the dough hook, combine the sourdough starter, water, salt, and yeast. For 10 minutes, beat the dough on low speed using the dough hook. The dough will be quite sticky and soft, but if you gently touch it, it should not adhere to your hands too much. If the dough looks overly sticky at first, don’t panic; sourdough is a moist dough that will firm up and tighten as it proves. Form the dough into a ball and place it in a greased mixing basin. Cover and let aside for 2 hours to rise in a warm location.
  2. After 2 hours, punch down the dough and fold it a few times before returning it to the bowl and covering it to double in size for another 2–3 hours.
  3. Place a pizza stone in the grill or oven and warm to the highest temperature you can obtain for at least 20 minutes when you’re ready to cook the pizza. The pizza stone will get very hot as a result of this.
  4. Form your pizza as the pizza stone warms up. Using flour, lightly dust a big piece of parchment paper. On the prepared parchment paper, roll out the dough into a 15-inch circle. Spread the tomato sauce evenly over the unbaked pizza dough with the back of a spoon, allowing approximately an inch for the crust to expand. Using your hands, tear the fresh mozzarella into medium-sized pieces and scatter them over the sauce. If desired, add any extra toppings.
  5. On transfer the pizza to the heated pizza stone, place it on a level surface. If using a grill, cook the pizza for 6 to 7 minutes, or 10 to 15 minutes in an oven, or until golden brown and bubbling.
  6. Before slicing and serving, garnish with fresh basil and parmesan.
