What are apple cider caramels, and how do you make them?

One of my favorite things we’ve cooked this year is these autumn caramels. Which, as you know, is a big deal (just check out the recipe index). Imagine a chewy salted caramel created from scratch with a strong, spicy punch of apple cider. They’re buttery, sweet, savory, and just delicious. Because I couldn’t stop eating them, I had to give them away. I believe you will like them as well.

Ingredients

  • 2 c. apple juice
  • 1 tablespoon unsalted butter
  • 1/2 gallon of heavy cream
  • 1 cup sugar (granulated)
  • a half cup of brown sugar
  • 1 teaspoon cinnamon powder
  • a half teaspoon of flaky salt

Instructions

  1. All sides of a normal loaf pan should be lined with parchment paper. Remove from the equation.
  2. Bring the apple cider to a boil in a medium-sized saucepan with a sturdy bottom. Reduce to a low heat and continue to stir every few minutes or so until the liquid has been reduced to about 1/4 cup and is thick and syrupy. For us, this took roughly 45 minutes!
  3. Remove the skillet from the heat and stir in the butter, cream, and sugars.
  4. Return to a high heat setting and bring to a boil. Bring the mixture to a boil until it reaches 252°F. While it’s boiling, don’t stir it.
  5. Remove the pan from the heat and fold in the cinnamon and salt with a rubber spatula until the caramel is smooth and creamy and no longer sizzling.
  6. Pour the caramel into the pan you’ve prepared. Refrigerate for approximately an hour to let the flavors to meld.
  7. Sprinkle with flaky sea salt and cut into with a very sharp knife.

These “apple cider hard candy” are soft, chewy little bites of apple-cider goodness. The perfect sweet treat for the holidays!.
