It’s officially s’mores season, which is one of my favorite times of the year. S’mores are one of my favorite desserts. It is, without a doubt, my all-time favorite taste combination. *Chef’s kiss* is the mix of toasted marshmallow, luscious chocolate, and buttery graham crackers.

So this summer, I thought to myself, “Why not add ice cream?” And, gosh, that was an Einstein-level concept. These s’mores ice cream sandwiches are the ideal summer treat for all of your summer gatherings or any hot night!

The nicest thing about these frozen s’mores is how simple they are to prepare. I’m talking four items, ten minutes, and one grocery store trip. So, buddies, let’s get started! These s’mores ice cream sandwiches are really simple to create. Plus, you can easily double or triple the recipe to feed more hungry visitors, or scale it down to serve one or two!

  1. On one side of the graham cracker, spread 1 tablespoon of Berryhill Hot Fudge. Place the fudge in the freezer to harden up.
  2. Place a Baker’s Corner Marshmallow on the opposite half of your graham cracker. Place the marshmallow on a baking sheet and bake for 5 minutes at 400°F, or until golden brown and puffy. Remove from the equation.
  3. On top of the hot fudge, place a tiny scoop of ice cream.
  4. Place the graham cracker on top of the ice cream and firmly push down to sandwich the two together.
  5. Return to the freezer for another 30 minutes or until ready to eat!
  6. Devour!

This delicious summer dish is relatively straightforward, but I do have a few tricks up my sleeve for you.

  • Place the fudge and marshmallows on the graham cracker’s backside. You are not need to do so, but it will improve the appearance. The front side of the graham crackers features the classic graham cracker appearance, however the rear is less appealing.

Ingredients

  • 4 Graham Crackers from Benton’s
  • Berryhill Hot Fudge Topping, 4 Tablespoons
  • 4 Marshmallows from Baker’s Corner
  • 4 ice cream scoops Vanilla Bean Ice Cream from Belmont

Instructions

  1. Make 8 squares by cutting the graham crackers in half horizontally.
  2. Place 4 squares on a platter with the smooth side of the graham cracker facing up. 1 tsp. Berryhill Hot Fudge Topping on each square While toasting the marshmallows, place the platter in the freezer to firm up.
  3. Roast the Baker’s Corner Marshmallows while the fudge is freezing. This may be done in the oven, on a skewer over a fire or a gas burner, or with a blow torch. If you’re going to use the oven, Place the remaining 4 graham crackers on a baking sheet lined with parchment paper and top with marshmallows. Preheat the oven to 400°F and bake the marshmallows for 5 minutes, or until golden brown and sticky.
  4. Place each marshmallow on the smooth side of the remaining graham crackers and put aside after toasted.
  5. Remove the graham crackers and fudge from the freezer. Spoon a tiny dollop of ice cream on top of the fudge using a small ice cream scoop or a spoon. If you do too much, your sandwiches will get really messy.
  6. Place the graham cracker on top of the ice cream and firmly push down to sandwich the two together.
  7. Return to the freezer for at least half an hour or until ready to serve! Devour!
