Ingredients

  • graham crackers (nine)
  • 13 tblsp butter (unsalted)
  • 6.5 ounces coarsely chopped unsweetened chocolate
  • a third of a cup of all-purpose flour
  • a third of a cup of cake flour
  • 12 teaspoon powdered baking soda
  • a quarter teaspoon of salt
  • 2 cup sugar (granulated)
  • 4 room temperature eggs
  • 1 tsp vanilla extract (14 tsp)
  • a pound of marshmallow fluff (13 ounces)

Instructions

  1. Preheat the oven to 325°F and line the bottom and edges of a 9 × 9 baking pan with parchment paper. Make a single layer of graham crackers in the bottom of the pan. To get everything to fit, you may need to split your graham crackers into quarters, but it doesn’t have to be perfect! Remove from the equation.
  2. Melt the butter and finely chopped chocolate in a heavy bottomed pot over medium low heat, stirring regularly, until smooth and totally melted. Remove the pan from the heat after the butter has melted and let to cool slightly.
  3. Beat the sugar and eggs together in a stand mixer equipped with the whisk attachment until frothy and light yellow in color. Scrape the bottom of the bowl clean before adding the chocolate and butter mixture. To make the mixture more homogeneous, beat it until it’s completely smooth. Scrape the sides of the pan and add the vanilla. Mix thoroughly. The finished product should be shiny.
  4. Mix in the flours, baking powder, and salt until well blended and no flour streaks remain. Do not overmix the ingredients.
  5. Spoon the batter over the graham crackers in the prepared pan with a rubber spatula, spreading it evenly all the way to the edges.
  6. Bake for 25 to 30 minutes, or until the edges are firm and a knife inserted in the middle comes out largely clean. Allow to cool on a wire rack.
  7. When the brownies are totally cold, pour the marshmallow fluff over them, spreading it all the way to the edges with a spoon to create huge swirls.
  8. To toast the marshmallow fluff, use a blowtorch if desired. If you don’t have a blowtorch, set the brownies under the broiler in the oven for a minute or two, keeping an eye on them.
  9. Allow an hour for the brownies to set before slicing into 9 large or 16 tiny brownies, being care to wash your knife between cuts. Enjoy!
