Skinny Strawberries and Cream Popsicles

A frozen dessert that tastes just like strawberry ice cream, with less fat and calories.

These strawberry popsicles are a refreshing summer dessert. They’re made with fresh strawberries, cream and sugar.

Skinny Strawberries & Cream Popsicles are a bikini-friendly summer treat, with layers of roasted strawberries and Greek yogurt.

The combination of strawberries and cream is like ambrosia. What could be better than juicy strawberries and scuculent cream?

Okay, there’s chocolate, but that’s a given. Chocolate is virtually a part of my bloodstream.

Aside from chocolate, I consider perfectly ripe fruit and cream to be gold.

So I picked a classic and slimmed it down. We’re using greek yogurt instead of cream. The strawberries are roasted to bring out their inherent sweetness, eliminating the need for added sweeteners. And, while we’re on the subject of sugars, there are none here that have been refined. Only honey to balance out the tanginess of the Greek yoghurts.

There’s something about eating dessert and feeling good about yourself that’s so rewarding.

Plus, aren’t they stunning? The marbled strawberries are a visual delight. And your buddies will think you’re a popsicle genius when all you did was roast some strawberries and whisk some ‘cream,’ and presto!

Ingredients

  • 1 quart stemmed and halved strawberries
  • 1 1/2 cups plain Greek yogurt (nonfat)
  • 3/4 gallon of whole milk
  • 1 tablespoon honey
  • vanilla extract (two tablespoons)
  • Mold for Popsicles

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit. Using parchment paper, line a cookie sheet. Roast the strawberries on a baking sheet for 25 minutes, stirring halfway through.
  2. Before putting the strawberries in the blender, let them cool somewhat. Pulse 2 to 3 times, or until the strawberries are pureed but still have some pieces.
  3. Whisk together the remaining ingredients in a medium mixing basin. Fill each popsicle mold halfway with the “cream,” then pour 1 spoonful of strawberry puree into each. Dollop 1/2 tablespoon puree on top, then cover with cream almost to the top. Add another 1/2 tbsp of puree on top to finish. Freeze for at least 4 hours, ideally overnight, after inserting a popsicle stick.
