Sheep and a strawberry pavlova

This cocktail is not only delicious and fresh, but also a perfect balance of light and sweet. It’s made with white wine, strawberry puree, sugar syrup and lemon juice.

Today was a fantastic day. We (four individuals) sat down to dessert after a delicious supper of sautéed breaded chicken, roasted garlic potatoes, and crispy asparagus. This is a fast dessert. To be accurate, it’s a three-minute dessert. Our dessert was vanished by the three-minute mark. It’s completely gone. It’s like a whole cake has vanished. In three minutes, you can make an entire strawberry pavlova. After that, what did we do? Oh, no problem, I was just out sheep-hunting. As in a sheep-hunting expedition. This isn’t a sheep chase. What’s more, guess what? In visuals, this would make a lot more sense. Allow me to demonstrate.

Ingredients

in order to make the meringue

  • 1 pound of sugar
  • salt (1/4 teaspoon)
  • a quarter teaspoon of cream of tartar
  • cornstarch, 1 tablespoon
  • 4 egg whites (big)
  • 1 teaspoon extract de vanille

for the garnish

  • 1 pint heavy cream
  • 2 tblsp. confectioners’ sugar
  • 1 teaspoon extract de vanille
  • a pinch of salt
  • 1 1/2 quarts cleaned, de-stemmed, and quartered fresh strawberries

Instructions

  1. Preheat the oven to 275 degrees Fahrenheit. On parchment paper, create the outline of a 10 inch cake pan with a pencil. Place the paper on a baking sheet and flip it over. Remove from the equation. 1/4 cup sugar and cornstarch, combined in a small bowl until cornstarch is well incorporated.
  2. In a larger mixing bowl, whip the egg whites on high speed until frothy. Combine the salt and cream of tartar in a mixing bowl. High-speed blending until soft peaks appear. Beat in the ordinary sugar in tiny increments until well combined, then add the cornstarch/sugar mixture. Finally, add the vanilla essence and beat until stiff peaks form (about the consistency of a soft whipped cream).
  3. Pour the mixture onto the parchment paper and spread the meringue out to the 10 inches you marked with the cake pan using the back of a big spoon. Make a big well in the middle of the meringue with the spoon. The inside of the circle should be approximately 1/2 inch height, while the outside should be around 1 1/2 inch tall. Preheat the oven to 350°F and bake for 1 hour and 15 minutes. Allow to cool completely.
  4. Make the topping while the meringue is baking! In a large mixing bowl, whisk together all of the ingredients (except the strawberries) until they attain a firm whipped-cream consistency. Once the meringue is finished, spread it over the top and top with strawberries. Voila!
