Ingredients

  • 1 cup sweet potato mashed (about 3 potatoes!)
  • maple syrup (1/2 cup)
  • 4 tbsp. oil or melted butter (avocado oil, vegetable oil, coconut oil, or anything you choose!)
  • 2 tblsp almond butter (creamy)
  • vanilla extract (two tablespoons)
  • 2 tablespoons powdered espresso
  • a third of a cup of cocoa powder
  • 1/3 cup flour (any combination of all-purpose, gluten-free, and oat flour worked nicely!)
  • 1 teaspoon powdered baking soda
  • salt (1/4 teaspoon)

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit and prepare a cookie sheet with parchment paper. Make several holes in your sweet potatoes with a fork. Roast the potatoes for 2 hours on the prepared cookie sheet, turning the potatoes halfway through. Remove the potatoes from the oven when they are very soft and oozing, and set aside to cool fully.
  2. After the potatoes have cooled, split them in half and scoop out the insides with a big spoon into a basin or a blender. Blend on high until creamy if using a blender. You can always mash with a fork if you don’t have a blender.
  3. Toss the potatoes with the maple syrup, oil, almond butter, and vanilla, and toss to blend.
  4. Mix together the cocoa powder, flour, espresso powder (if using), baking powder, and salt in a large mixing bowl. Using an electric mixer, beat until entirely mixed and no flour streaks remain. It will be a thick batter, but it should be creamy!
  5. Preheat the oven to 350°F and line an 8 × 8 pan on both sides with parchment paper. Spoon the brownie batter onto the prepared pan and spread it evenly all the way to the edges using a rubber spatula.
  6. Bake for 30 minutes at 350 degrees F, or until a knife inserted in the center comes out largely clean. Allow time for the brownies to cool fully before slicing into 16 pieces. Enjoy!
