  • 2 beaten egg whites
  • 1/2 pound of caramel
  • 1/2 cup condensed milk, sweetened
  • vanilla extract (two tablespoons)
  • 14 oz. shredded sweetened coconut
  • 2 teaspoons flour


  1. Attach a whisk attachment to a stand mixer. Before you put the egg whites in the bowl, make sure it’s clean and dry. Begin by pounding at a moderate speed and gradually increase to high until light and stiff peaks develop.
  2. Combine the caramel sauce, sweetened condensed milk, flour, and vanilla essence in a separate small bowl. Whisk until smooth and totally blended.
  3. Fold the caramel and milk mixture into the egg whites using a rubber spatula. Scrape down the edges of the basin as you fold, folding the mixture over itself to equally include the caramel and milk without deflating the egg whites. Repeat until there are no more streaks of unmixed egg whites.
  4. Fold in the coconut last.
  5. Scoop the macaroons 2 inches apart onto a baking sheet lined with parchment paper using a 2 ounce cookie scoop.
  6. Bake the cookies at 325° for 12 minutes, or until the top flakes of coconut are golden and the macaroons sound hollow when tapped.
  7. You may sprinkle the tops of the macaroons with chocolate if desired!
