Salted chocolate peanut butter surprise cookies

These cookies are so easy to make they’ll have your kids making them in no time! The dough is mixed together with a few simple ingredients and then refrigerated for at least an hour. Once the dough has chilled, you can roll out the mixture into 2-inch rounds and stamp them into squares or rectangles (whatever size cookie you prefer). Let sit for about 15 minutes before baking; be sure not to overbake these guys because they’ll dry out pretty quickly.

Now, let’s go on. As a result, I’m now a Parent Trap Lindsay doppelganger. That is to say, everything Parent Trap Lindsay did in the film was something I wanted to do when I was a child. We’re the same guy, after all. Obviously. As though you’re eating Oreos with peanut butter. It’s the most amazing thing ever. And we do it together, which makes us both pretty awesome. So I’ve been eating Oreos and peanut butter like it’s my job since the movie came out in 1998. This is what got me hooked on chocolate and peanut butter in general.

Ingredients

To make the dough, combine the flour, baking powder, and salt.

  • 1 1/2 cups flour (all-purpose)
  • 1/2 cup chocolate powder, unsweetened
  • 1/2 teaspoon bicarbonate of soda
  • salt (1/4 teaspoon)
  • 1/2 cup softened butter
  • 1/2 cup sugar (granulated)
  • 1/2 cup brown sugar, packed
  • a quarter cup of peanut butter
  • 1 egg
  • 1 teaspoon of milk
  • 1 teaspoon vanilla extract
  • a quarter teaspoon of salt

To make the filling

  • 3/4 cup powdered sugar, sifted
  • 3/4 cup peanut butter, smooth
  • 1/2 teaspoon iodized salt (normal)

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Combine flour, cocoa powder, salt, and baking soda in a medium mixing basin; put aside.
  2. With an electric mixer, cream together butter, 1/2 cup granulated sugar, brown sugar, and 1/4 cup peanut butter in a large mixing dish. In a separate bowl, whisk together the egg, milk, and vanilla extract. With the mixer, incorporate as much of the dry ingredients as possible. With a wooden spoon, stir in the remaining dry ingredients. Form the chocolate dough into 32 1-1/4-inch diameter balls. Remove from the equation.
  3. In a medium mixing bowl, whisk together powdered sugar and the remaining 3/4 cup peanut butter until smooth. Make 32 (3/4-inch) balls out of the mixture.
  4. Slightly flatten a chocolate dough ball on a work surface and top with a peanut butter ball. Cover the peanut butter filling with chocolate dough, totally coating it. Form a ball out of the dough. Using the leftover chocolate dough and peanut butter filled balls, repeat the process.
  5. Place the balls 2 inches apart on a baking sheet that hasn’t been greased. With the bottom of a glass dipped in the 2 tablespoons granulated sugar, lightly flatten. Bake for 12 minutes, or until the cookies are barely set and the top is slightly cracked, in a preheated oven. Allow 1 minute for cookies to cool. Allow cookies to cool fully on wire racks. Why not save it for later? No. Now is the time to eat? Yes.
