Wow, these chocolate peanut butter cups are incredible. Peanut butter and chocolate are probably my favorite combination. It’s as if combining the two results in a unique taste. It’s not exactly chocolate, and it’s certainly not peanut butter…

I know, it’s brilliant. However, take it seriously. This is a winning combination. And, as my friend Lanie would attest, I like a good pinch of salt. It’s like a small jolt that intensifies the tastes. WOOHOOOO

Ingredients

  • 1 cup peanut butter (salted)
  • 2/3 CUP CONFECTIONER’S SUCTIONER’S SUCTIONER’S
  • 2 1/2 cups chocolate chips (semisweet)
  • sprinkling with sea salt

Instructions

  1. Combine the confectioner’s sugar and peanut butter in a small bowl and whisk until smooth. Roll the peanut butter mixture into balls using teaspoon-sized quantities, then press down to make little coin-like circles. Remove from the equation.
  2. Melt the chocolate chips in a microwave-safe dish in 30 second intervals, stirring after each blast (this will prevent the chocolate from overheating and burning).
  3. Set the cupcake liners on a cutting board or other flat surface while the chocolate is heating. Spoon teaspoon-sized dollops of chocolate into the cupcake liners after the chocolate has melted.
  4. After that, add the peanut butter coins you made previously. Spread another dab of melted chocolate on top of the peanut butter, swirling it around with a spoon to level it out. Finally, a pinch of sea salt should be sprinkled over the tops of each cup. Place the cups in the fridge or freezer to chill completely before eating. Nom nom nom, please.
