Great. Let’s get this party started. Fudge is one of my favorite desserts. Soft caramels, too. And lightly salted foods (if you haven’t already, try sprinkling sea salt on your fruit next time). It’s just a pinch. I assure you that you will not be dissatisfied). So. My new favorite item is salted caramel fudge. And, unlike regular fudge, it’s not so unbearably sweet that you can only eat one mouthful. This dish is about the size of a brownie (YUSS!). So get out your candy thermometers, crank up the heat, and get to work!
To make the fudge, combine the following ingredients in a mixing bowl.
10 coarsely chopped bittersweet chocolate, 1/2 oz 1/4 teaspoon iodized salt, normal 2 tablespoons sea salt, flaky 1 3/4 pound of sugar 1/2 cup corn syrup (light) 2 quarts of thick cream 1 cup of water Candy thermometer 3 tablespoons unsalted butter, sliced into cubes
Line an 8-inch-by-8-inch baking dish with parchment paper (don’t forget the sides!). Remove from the equation.
Bring the cream to a low boil in a large saucepan over high heat. Then whisk in the chocolate until it melts. Reduce the heat to low and continue to whisk until the mixture thickens. Remove from heat and put aside.
Bring sugar, corn syrup, water, and salt to a boil in a separate big pot. Continue to boil, turning periodically, for approximately 10 minutes, or until the sugar becomes dark brown.
After that, place a candy thermometer in the pan. Pour the chocolate mixture into the bowl. Boil for another 15 minutes, or until the thermometer reads 255°F. It must reach this temperature before being removed, otherwise your candies would be fudge-like rather than caramel-like. Stir in the butter until it is completely melted. Pour into the glass baking dish right away. Allow 10 minutes for the caramel to cool before adding the salt. Refrigerate for 1-2 hours before serving. Cut into pieces and serve. Nom nom nom, please.
