But first, let’s talk about brownies.

Allow me to introduce myself to any of you who are unfamiliar with me. My name is Sarah, and I’m a brownie connoisseur. Broma Bakery would be a brownie baking blog if it were up to me. It’s all about the brownies, all the time. Brownies are a delicious treat. Everyone, absolutely everyone, loves chocolate. What could be better than a fudgy, chocolaty rectangle of decadence than a brownie? The only thing that comes to mind is a brownie combined with something else. It’s similar to cheesecake. Alternatively, you may use peanut butter.

Alternatively, salted caramel.

Rich, gooey, fudgy, melt-in-your-mouth-y, chewy, molten, sweet-and-salt-tastic, and wonderful in every way, these salted caramel brownies are described as: rich, gooey, fudgy, melt-in-your-mouth-y, chewy, molten, sweet-and-salt-tastic, and great in every way. You’ll be in brownie bliss with just one taste. And they’re extremely easy to do. The brownies itself take less than 5 minutes to make (#onebowlwonder), and the salted caramel sauce is surprisingly simple! If you don’t want to use caramel, you can simply use the brownie batter as a basis and add any additional ingredients you like (pumpkin, anyone?).


Caramel sauce preparation

Although making homemade caramel may seem to be a difficult undertaking, it is really rather simple. To keep the caramel from burning, I recommend using a heavy-bottomed pot and being patient. Sorry, but you can’t expedite the caramel-making process! To prepare the salted caramel sauce, first cook the sugar for a few minutes over medium-high heat. The sugar will clump together and become a beautiful brown hue.

Remove the pan from the heat after the sugar has become brown and mix in the butter very away. The mixture will begin to bubble wildly, which is exactly what you want! Add the sea salt and heavy cream once the butter has been well absorbed. Return the caramel to the fire for a few seconds after fully mixing until everything is incorporated. After that, leave the caramel sauce aside to cool.

Handle the hot caramel with extreme caution, as it may cause a serious burn if you contact it!

To make the brownies, combine the following ingredients.

  • cocoa powder, 3/4 cup
  • 1 1/2 pound of sugar
  • 2 eggs
  • 12 tblsp butter (unsalted)
  • 1/2 cup flour (all-purpose)
  • vanilla extract (two tablespoons)
  • a half teaspoon of salt
  • 1 teaspoon coffee, brewed (optional)
  • bittersweet chocolate disks (1/2 cup) (optional)

To make the salted caramel, combine the following ingredients in a mixing bowl.

  • 1 cup sugar (granulated)
  • 6 tablespoons room temperature unsalted butter, sliced into teaspoons
  • 1/2 cup room temperature heavy cream
  • 1 to 1 1/2 teaspoons sea salt (I used finely crushed pink Himalayan sea salt, which tasted delicious!)


Make the caramel sauce.

  1. Heat the sugar in a medium saucepan over medium-high heat for approximately 5 minutes. Stir the sugar with a spatula from time to time to ensure it reaches the bottom of the pan. The sugar will be lumpy at first, but it will quickly melt and develop a brownish tint. Stir occasionally, just enough to keep everything cooking evenly.
  2. The sugar should be completely melted after 5 minutes. Remove from heat as soon as it becomes a dark caramel color and mix in butter. The mixture will erupt in a flurry of bubbles. You’re doing everything correctly.
  3. Stir the butter and sugar together with your spatula until they are totally melted. This might take up to two minutes.
  4. Pour in the heavy cream and season with salt. Depending on how salty you want it, you may use anywhere from 1 to 112 tablespoons. Stir everything together with your spatula until it’s all blended. Return to the burner for another 30 seconds, stirring constantly. Remove from the fire and set aside for 15 minutes to cool.

Brownies should be made.

  1. Preheat the oven to 350°F while the caramel cools. Set aside an 8′′x8′′ baking dish lined with parchment paper.
  2. Melt the butter in a microwave-safe mixing bowl. Combine the sugar, eggs, vanilla extract, salt, and optional coffee in a mixing bowl. Fold in the cocoa powder and flour after everything is well blended. Toss in bittersweet chocolate disks if using. Can you believe it’s that simple?!
  3. Spread a little more than half of the brownie batter evenly around the borders of the baking dish. Spread 34% of a cup salted caramel evenly over the brownie batter, but not quite to the edges. Spread the remainder of the brownie batter on top, squeezing in as much of the caramel as possible. It’s OK if a bit comes out.
  4. Bake for about 40 minutes, or until a knife inserted in the middle comes out clean. Allow to cool fully after removing from the oven (about 1 hour). Cut the cake into 9 squares and eat your heart out!
