Today we have something extra special in store for you. My pals, Rocky Road Brownies, ROCKY. ROAD. BROWNIES. Imagine a fudgy, cakey brownie with toasted marshmallows, chocolate chips, and peanuts on top.

I mean… JUST TAKE A LOOK AT THESE PICTURES. They’re decadent, thick, fudgy, and drool-inducing.



What is the meaning of rocky road?

Marshmallows, chocolate, and peanuts are the typical ingredients of Rocky Road (or some other crunchy nut). You’ve definitely tasted this flavor in an ice cream cone or handmade fudge, and I assure these brownies are just as amazing. The marshmallows help to cut through the brownies’ richness, while the peanuts give a welcome crunch.

Don’t say I didn’t warn you about these thiccccccccccccccccccccccccccccccccccccccc The brownie foundation is delicious on its own, but add the iconic rocky road taste on top and you’ve got yourself a chocolaty marshmallow treat. Fortunately, they don’t call for any unusual ingredients! You’ll need the following items:

  • Butter
  • Brown Sugar is a kind of sugar that is used
  • Eggs
  • The Power of Cocoa
  • Extract of Vanilla
  • Flour
  • Marshmallows in miniature
  • Chips in chocolate
  • Peanuts

Most of these ingredients are likely already in your pantry, and they’re created in one dish, making cleaning a breeze!


Brownies: Fudgy or Cakey?

This is a topic that divides us all. And the good news is that with these brownies, which are both fudgy and cakey, you don’t have to pick.

Cakey AND fudgy? But how, you may wonder. We arrived at this ideal brownie that would delight everyone after a lot of testing and numerous brownies devoured (we’re not complaining). The brownies’ cakey brownie structure comes from the eggs and whole wheat flour, while the high cocoa and butter content keeps them fudgy and moist.

As a result, you get the best of both worlds.



What is the best way to toast marshmallows in the oven?

To obtain a decent bake on your brownies without completely torching your marshmallows, sprinkle them on at the end of the baking time. When the brownies have approximately 10 minutes remaining on the timer, remove them from the oven, sprinkle the topping on top, and you’re done! We propose using the broiler and keeping an eye on them if you want some charred ones (completely personal opinion). If you want a lovely even golden brown, bake them for approximately 10 minutes at 350 degrees F, or until they bubble up and begin to brown.

Because marshmallows have a high sugar content, they may rapidly catch fire, so keep an eye on them and make sure your oven rack isn’t too near to the top.

  • 1 and a quarter cup salted butter
  • 2 1/2 cups brown sugar (light)
  • 4 big room-temperature eggs
  • a half-cup of cocoa powder
  • a quarter teaspoon of salt
  • vanilla extract (two tablespoons)
  • 2/3 cup whole wheat flour from Bob’s Red Mill
  • tiny marshmallows, 2 c.
  • 2 cups chocolate chips (semisweet)
  • 1 1/2 cups coarsely chopped peanuts


  1. Preheat the oven to 350 degrees Fahrenheit. Set aside a 9′′x9′′ pan that has been greased and lined with parchment paper.
  2. Combine butter and sugar in a large microwave-safe bowl. Microwave for 30 seconds, then remove from the microwave and whisk to combine. Repeat the procedure two more times. Although sugar particles will remain, the idea is to achieve a glossy surface.
  3. Allow to cool somewhat before adding the eggs one at a time, whisking well after each addition. Whisk until the color of the mixture lightens somewhat.
  4. Combine the cocoa powder, salt, and vanilla essence in a mixing bowl. Mix in the flour until it’s barely blended.
  5. Bake for 45 minutes after pouring the ingredients into the prepared baking pan. Insert a knife into the middle. Remove the brownies from the oven when the knife comes out pretty clean. Sprinkle the marshmallows, chocolate chips, and chopped peanuts over the tops. To get the marshmallows to crisp up, place them in the broiler. Return the brownies to the oven for another 5 minutes or so, or until the marshmallows are toasted. Keep an eye on the marshmallows and rotate the pan to ensure that they toast evenly.
  6. Remove the brownies from the oven and set aside to cool before cutting. Enjoy!
