Ingredients
for the icing
- 2 1/2 cups flour (all-purpose)
- cocoa powder (2 tblsp.)
- 1 teaspoon bicarbonate of soda
- 1 teaspoon kosher salt
- a half cup of vegetable oil
- 1 1/2 cups sugar (granulated)
- 2 1/2 tsp. red food coloring (optional)
- 4 room temperature eggs
- 1 tblsp vanilla bean extract
- 1 teaspoon balsamic vinegar
- 1 and a third cup buttermilk
icing made with cream cheese
- 8 ounces room temperature cream cheese
- 8 ounces room temperature butter
- 1 tbsp extract de vanille
- a half teaspoon of salt
- 7 c. sugar (powdered)
Instructions
- Preheat the oven to 350°F and line the bottoms of two 8 or 9-inch round pans with parchment paper. Grease and butter the sides. Remove from the equation.
- Sift together the flour, cocoa powder, baking soda, and salt in a large mixing basin. Remove from the equation.
- Combine the oil and sugar in a stand mixer fitted with the paddle attachment and beat until smooth, approximately 2 minutes. One at a time, beat in the eggs until light and fluffy. Mix in the vanilla essence and food coloring well.
- Set aside the buttermilk and vinegar after mixing them together.
- In four separate additions, alternate adding the dry ingredients and the buttermilk and vinegar combination, making sure to finish with the flour. Don’t overmix the ingredients.
- Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out largely clean, after dividing the mixture between the prepared pans. Allow for thorough cooling of the cakes.
- Cream the butter and cream cheese in a stand mixer fitted with a paddle attachment until light and fluffy, approximately 2 minutes. Whip in the vanilla extract, salt, and powdered sugar for another 2 minutes to mix.
- Place the first cake on a platter and spread a generous amount of frosting on top. Place the second and third layers on top of the first, icing in between. Finish by sprinkling the leftover icing around the outside of the cake!
