What are raspberry crumble bars, and how do you make them?

Crumble bars, jam bars, shortbread jam bars, crumb bars…they go by a lot of names, but they’re a classic, easy delicacy that my family has been making for years. Shortbread cookie dough and preserves are used to make a typical shortbread crumb bar. Simply prepare your favorite shortbread recipe and push 2/3 of the dough onto a parchment-lined baking sheet. Cover the bottom layer with a thick layer of jam, then crumble the remaining batter over top. You’ll be in buttery, jammy heaven once it’s baked to a perfect golden brown. For the ultimate sweet treat, the soft shortbread pairs nicely with the sugary chew of the jam.

Raspberry Crumb Bars Ingredients

These jam shortbread bars are really simple to prepare and use just a few ingredients that you most likely already have on hand. It’s critical, like with any easy recipe, to utilize high-quality components. Every component stands out and has an impact on the final jam shortbread bars.

  • Butter: A nice buttahhh is the foundation of every delicious shortbread. You’ll be able to notice the difference in the melt-in-your-mouth buttery crumb if you splurge on the excellent stuff (we adore Vermont Creamery!).
  • Sugar: These shortbread bars aren’t sickeningly sweet, but they do need a little quantity of sugar to caramelize and chew just so.
  • All-purpose flour should be used to get the proper crumb in your shortbread bars.
  • Salt: You’ll only need a pinch, but salt is essential for flavor development. It will balance out the sweetness and make these jam bars really addictive.
  • We used our favorite raspberry preserves (Bon Maman!) to make these crumb bars, but you could use whatever flavor you choose. The possibilities are endless: blueberry, blackberry, strawberry, apricot, and so on.

Advice on Making the Best Raspberry Crumb Bars

This raspberry crumble bars recipe is really easy, but these three tips will ensure that your crumb bars are delightfully soft and melt in your mouth!

  • Don’t overwork the dough: The secret making superb shortbread is to use a dough with as little gluten as possible. This will result in a soft, melt-in-your-mouth feel, similar to shortbread. You want your dough to be crumbly, so that’s precisely what you’ll get!
  • Use high-quality preserves: You can always prepare your own raspberry filling with fresh or frozen fruit, but high-quality preserves may give you the same gourmet, straight from a bakery jam bar flavor!
  • To bake them to perfection, follow these steps: There’s a delicate line between doughy and overcooked when it comes to shortbread. The bars should bake for approximately 25 to 30 minutes, and they’ll be done when they’re slightly golden brown.

How do you keep jam shortbread bars fresh?

If you’ve ever gotten a tin of Christmas cookies, you’re surely aware that shortbread is one of the few biscuits that keeps well. They’ll taste best when they’re fresh, but they’ll last far longer than softer cookies like chocolate chip cookies or sugar cookies. These raspberry crumble bars may be stored in an airtight container at room temperature for up to two weeks or in the fridge for up to three weeks! Want to keep them for even longer? Freeze them for up to three months in a freezer-safe plastic bag!

Ingredients

  • 1 cup salted butter, cut into cubes and kept cold
  • 1/2 cup sugar (granulated)
  • 1 teaspoon extract de vanille
  • 2 cups flour (all-purpose)
  • salt (1/4 teaspoon)
  • 3/4 gallon jam

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Set aside an 8 × 8 pan lined with parchment paper on both sides.
  2. Combine the butter, sugar, flour, salt, and vanilla in a stand mixer fitted with the paddle attachment and beat until the dough begins to come together, approximately 2 minutes. The dough will be crumbly, which is exactly what you want it to be!
  3. 2/3 of the shortbread dough should be pressed into an even layer in the prepared pan. Spread the jam on top in a uniform, thick layer. Crumble the remaining shortbread over the jam, leaving a few dots of jam showing through. Preheat the oven to 350°F and bake the bars for 25-30 minutes, or until golden brown.
  4. Allow the shortbread to cool completely before cutting it into the appropriate size and shape. Enjoy!

Jam bars, raspberry crumb bars, and jam shortbread bars are all examples of jam bars.

Notes

  1. Shortbread is made with a dry dough. If your dough crumbles, don’t panic. The butter will melt and glue the dough together while it bakes!
