Ingredients

  • 1 cup salted butter, cut into cubes and kept cold
  • 1/2 cup sugar (granulated)
  • 1 teaspoon extract de vanille
  • 2 cups flour (all-purpose)
  • salt (1/4 teaspoon)
  • 3/4 gallon jam

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Set aside an 8 × 8 pan lined with parchment paper on both sides.
  2. Combine the butter, sugar, flour, salt, and vanilla in a stand mixer fitted with the paddle attachment and beat until the dough begins to come together, approximately 2 minutes. The dough will be crumbly, which is exactly what you want it to be!
  3. 2/3 of the shortbread dough should be pressed into an even layer in the prepared pan. Spread the jam on top in a uniform, thick layer. Crumble the remaining shortbread over the jam, leaving a few dots of jam showing through. Preheat the oven to 350°F and bake the bars for 25-30 minutes, or until golden brown.
  4. Allow the shortbread to cool completely before cutting it into the appropriate size and shape. Enjoy!
