Scotcheroos are a traditional Scottish dish.

When things become crazy during the holidays, I’m searching for a quick and simple dessert to whip together on the spur of the moment with few ingredients. This is when these simple Scotcheroos come in handy. They’re no-bake, just need six ingredients, and are a tremendous success for any occasion. I’m certain you’ll like them as much as I do.

Scotcheroos have always been a favorite of mine since I was a kid. We’ve been running strong for quite some time now. Rebecca and I used to make a batch of scotcheroos after school and I swear we could eat the whole tray in under 15 minutes. It’s an achievement I’m still proud of today. To be honest, nothing has changed. As an adult, I still find these chewy peanut butter, chocolate, and butterscotch delights as addictive as I did as a youngster.

So, what exactly are Scotcheroos?

Scotcheroos are a chewy peanut butter Rice Krispie dessert with a luscious butterscotch and chocolate covering that requires no baking. They’re a simple, crowd-pleasing bar to make for the holidays or any other occasion.

Now I know how much you like your no-bake bars in the summer (and how much I despise them). Hello, no-bake strawberry cheesecake bars), but keep these in mind for the fall. In the summer, I despise turning on the oven, but around the holidays, oven space is limited, so I like a treat that I can make on the stovetop or in the microwave.

Plus, a dessert with just six ingredients? Please add me to the list.

What are the components for the greatest scotcheroos?

To make delicious scotcheroos, you’ll only need a few ingredients, most of which you probably already have on hand!

  • Karo® Light Corn Syrup: In this delectable dessert, Karo® Corn Syrup is a must! Nothing is worse than a hard scotcheroo, and Karo corn syrup will keep yours wonderfully soft and chewy by providing moisture and sweetness!
  • Sugar: A little more sugar is never a bad thing. A delightfully chewy and sweet bar is created by cooking down some sugar with Karo® Light Corn Syrup.
  • Classic Creamy Peanut Butter: Rather than utilizing natural peanut butter, we advocate choosing traditional creamy peanut butter! This will assist to stiffen up and keep your bars together.
  • Crispy Rice Cereal: This light and airy cereal will keep your scotcheroos light and crisp while adding the right nutty bite.
  • Semi-sweet Chocolate Chips: A thick coating of chocolate and butterscotch tops these peanut butter chocolate no bake bars. We prefer chocolate chips over chocolate bars because they melt faster and leave less mess.
  • Butterscotch Chips: Butterscotch chips will provide a bit of buttery, caramell-y taste to these scotcheroos without overpowering the flavor profile. They also aid in the thinned out of the chocolate, making it easier to cut and bite into!

Tips on how to make the greatest scotcheroos

  • Scotcheroos need the good ol’ Jiff, Skippy, or Peter Pan of your childhood, not natural peanut butter. These bars will not set up as well with a natural, more runny peanut butter.
  • Prepare your pan as follows: Scotcheroos’ foundation builds up rapidly, similar to marshmallow krispie desserts. It’s a good idea to have your pan lined and ready to go before you begin creating the filling, so you have enough time to press the mixture into an equal layer before it hardens.
  • Keep an eye on the chocolate: Because microwaves have varied wattages, keep an eye on the chocolate and butterscotch chips as they melt to avoid burning!

Scotcheroos: How to Store Them

Scotcheroos are a dessert that can withstand a lot of abuse. Keep them fresh for up to 2 weeks in a plastic bag, an airtight container, or a cookie pan, or freeze them for up to 3 months. But don’t hold your breath for them to stay that long. We usually end up slipping these out of the freezer for a midnight snack, even when I actually freeze them. They travel well, making them the ideal treat to send to a loved one or drop in a cookie exchange container!
