Pumpkin raisin scones

Pumpkin scones are a sweet, savory breakfast treat. They’re made with pumpkin puree and raisins to give them a unique flavor that goes great with coffee or tea.

Have a wonderful Sunday! I haven’t felt this giddy about the possibility of a whole Sunday in a long time. Perhaps it’s because I won’t have any job to do this week, what with Thanksgiving and all. I’m looking forward to the Thanksgiving treats! So. I awoke this morning ready to face the day and decided to add some spice to my life with these pumpkin scones. Pumpkin is the iconic Thanksgiving flavor, and with Thanksgiving just around the horizon and all, these scones are the ideal way to kick off a fantastic holiday!

2 cups flour (all-purpose)

brown sugar, 1/3 cup

a pinch of cinnamon

2 tablespoons powdered baking soda

1/2 teaspoon bicarbonate of soda

salt (1/4 teaspoon)

1 pound unsalted cold butter, cut into 1 cm pieces

1/3 gallon of milk

1/2 cup pureed pumpkin

1 teaspoon vanilla extract

a third cup of raisins

1 tbsp. sugar (cane) for sprinkling

For the laundry:

1 egg

1 tablespoon of heavy cream

Preheat the oven to 400 degrees Fahrenheit. Combine the dry ingredients in a large mixing basin. Blend in the butter until the mixture resembles peas or very coarse bread crumbs. Remove from the equation.

Combine pumpkin puree, milk, and vanilla in a smaller mixing dish. Mix just until dough comes together in the butter/flour mixture. Refrigerate for 10 minutes before serving.

Lightly knead cold dough on a floured board and spread out into a 12′′x 5′′ rectangle. Cut the dough lengthwise into quarters, then cut each quarter into eight triangles. Brush with egg wash and place on a prepared baking sheet. Sprinkle with cane sugar and bake for 15-20 minutes, or until a knife inserted into the scones comes out clean. Place on a cooling rack. Serve with jammies and butter. Yay!
