Pumpkin Chocolate Chip Muffins

Seasonal baked goods are always a great idea, but these muffins with pumpkin and chocolate chips will be especially impressive. Adding dried cranberries to the batter gives these tasty treats an extra amount of autumn-inspired flavor that’s perfect for getting into the spirit.

There’s nothing quite like a freshly baked muffin. Especially when there are chocolate chips in the muffin.

That’s why these Ghirardelli’s Grand Chip Pumpkin Chocolate Chip Muffins have piqued my interest. The Grand Chip is Ghirardelli’s biggest baking chip to date, and I simply had to thank them for creating such a massive chocolate chip.

They’re perfect in these Pumpkin Chocolate Chip Muffins, with their rich chocolate flavor shining through in every mouthful. I’ve also used the great chip in chocolate chip cookies, which results in an extremely chocolaty cookie that I would never complain about.

Let us now turn our attention to the pumpkin muffins themselves. This recipe is one of my favorites since muffins can be so dry. As a result, the pumpkin puree adds a delightful moistness to these muffins.

I added cinnamon, nutmeg, and cloves to really bring out the pumpkin taste. When I’m feeling very adventurous, I’ll add a pinch of ginger to the mix. Occasionally, cardamom is used. ALL THE FALL SPICES IN ONE PLACE.

Pumpkin Chocolate Chip Muffins with cinnamon, nutmeg, ginger, and large chocolate chips are ridiculously moist! Plus, you can freeze them for a quick midweek treat!

Ingredients

  • 3/4 cup pureed pumpkin
  • 3/4 cup sugar (granulated)
  • a half cup of vegetable oil
  • 2 big room-temperature eggs
  • vanilla extract (two tablespoons)
  • a third of a cup of all-purpose flour
  • a quarter teaspoon of baking powder
  • 1 teaspoon bicarbonate of soda
  • a pinch of cinnamon
  • nutmeg (1/2 teaspoon)
  • a half teaspoon of ginger
  • a quarter teaspoon of cloves
  • a half teaspoon of salt
  • Ghirardelli Semi-Sweet Grand Chips, 12 cup
  • Sugar for sprinkling on top of the muffins (optional)

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit. Spray 12 muffin cups with cooking spray and line with muffin liners. Remove from the equation.
  2. Combine the pumpkin puree, sugar, vegetable oil, eggs, and vanilla extract in a large mixing bowl. Combine the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt in a separate basin.
  3. Stir the dry ingredients into the wet until everything is completely blended. Add the Grand Chips and fold them in. If used, finish with a dusting of finishing sugar.
  4. Scoop batter into prepared muffin pans, filling them about 2/3 full. Bake at 425°F for 5 minutes, then reduce to 375°F and bake for another 15 minutes. Allow to cool for a few minutes before serving!
