Ingredients

in order to make pumpkin cupcakes

  • 1 1/2 cups flour (all-purpose)
  • a quarter cup of sugar
  • 1 teaspoon bicarbonate of soda
  • a quarter teaspoon of baking powder
  • 1 teaspoon kosher salt
  • nutmeg (1/2 teaspoon)
  • cinnamon (1 1/2 teaspoons)
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 cup pureed pumpkin
  • 1/3 gallon of milk
  • Canola (or vegetable) oil (1/2 cup)

a swirl of cream cheese

  • cream cheese, 8 oz
  • 1/3 cup sugar, granulated
  • 1 egg

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Combine the dry ingredients in a large mixing basin. Combine the eggs, oil, milk, vanilla, and pumpkin puree in a mixing bowl.
  2. Muffin trays should be greased. Half of the pumpkin batter should be poured into 12 muffin cups. Then top with half of the cream cheese filling. To get a marbled look, swirl with a knife.
  3. Fill the 12 cups with the remaining half of the pumpkin mixture. The second half of the cream cheese mixture should be placed on top. Swirl with your knife one more to blend. Cinnamon powder is sprinkled on top. Bake for 20 minutes, or until a knife inserted into the muffin comes out clean.
