Puddle cookies

A Puddle is a type of cookie made using an old Scottish recipe. It’s shaped like a bowl and has soft, chewy centers with crispy edges. These cute little cookies are better than any other kind because they don’t have additives or preservatives!

The “chocolate puddle cookies” are a chocolate cookie that is made by dropping melted chocolate onto a cold cookie sheet.

Anyone who lives in lower Manhattan is familiar with the Clinton Street Baking Co.’s deliciousness. They’re known for their incredible fluffy, moist pancakes (the blueberry ones are to die for) and delicious baked goodies. I’m ecstatic that I came upon their recipe in this Daily Candy post. The only item I changed was the vanilla extract for espresso powder. Espresso intensifies the chocolate taste even more than vanilla. Anyway, there’s an entire book of Clinton Street recipes, right? Is this, like, heaven?!

3/4 cup sugar (brown)

1/2 cup flour (all-purpose)

a quarter teaspoon of baking powder

salt (1/4 teaspoon)

vanilla extract (1/2 teaspoon)

1 tblsp. rapeseed oil

1 teaspoon butter (unsalted)

2 eggs

2 cups chocolate chips (semisweet)

Preheat the oven to 350 degrees Fahrenheit. Melt the oil, butter, and 1 cup of chocolate chips in a saucepan until the mixture is smooth. Allow to cool.

Whisk together the eggs, brown sugar, and vanilla extract in a medium mixing basin. Fold in the chocolate mixture gently.

Combine the dry ingredients in a separate medium bowl. Fold in the remaining chocolate chips after pouring the chocolate/egg mixture into the dry ingredients.

In a small pan, freeze the batter for 10 minutes, or until it hardens.

Scoop batter onto parchment-lined (or oiled) cookie sheets in rounded tablespoons. Bake for 10-12 minutes, or until the tops are gleaming and crackly. Clinton Street recommends letting them cool before eating them, but I find that eating them immediately out of the oven is just great.
