BEHOLD! You’ll never have a better pistachio cake. In fact, I’ve changed my birthday cake order this year to this pistachio cake since it’s *that* wonderful. When I say this is the finest cake I’ve baked in years, I’m not kidding. It’s sweet, a little salty, a little nutty, and oh boy, is it moist. I’m at a loss for words when it comes to describing the texture of this cake. It’s soft, somewhat thick, nutty, and melts in your tongue almost instantly.

Take my word for it, but don’t take my word for it. Make it for yourself if you can.

She’s also a natural beauty who doesn’t use pudding mix, food coloring, or artificial flavoring. Freshly ground pistachios and a blend of vanilla and almond essence are used to make this homemade pistachio cake. A delicately flavored pistachio cake emerges as a consequence.

How do you create a green pistachio cake without using food coloring?

Pistachio pudding mix or other fake pistachio flavors are used in many pistachio cake recipes. Pistachio flavour doesn’t taste anything like pistachios. It’s generally extremely sweet and has a subtle almond flavor to it. Now, I’m not disparaging that flavor (it’s fantastic), but we’ve always enjoyed actual pistachios, and when we set out to create a pistachio cake, we wanted it to taste nutty, salty-sweet, and like it was packed with them. That is precisely what we did.

But, without using any green pudding mix or food colour, how can you make the pistachio cake green? The solution may seem self-evident, yet… PISTACHIOS. Raw pistachios (not roasted and salted) have a little brighter, more vivid green color than roasted pistachios, and will give your cake the correct pale green colour.

That being said, if you want your cake to be a vibrant green hue (maybe for St. Patrick’s Day! ), you can definitely use green food coloring to make it such!

How much of a cake does this recipe yield?

The great thing about homemade cake is that it can be created in a number of forms and sizes. The following sizes of pistachio cakes may be made using this recipe:

  • 3 thinner 6 inch layers: This is what the pistachio cake looks like in the images. The cake has a fair height and the layers are still substantial, but by keeping your layers slightly thinner, you obtain a higher frosting to cake ratio, which always makes me feel like I’m eating a luxury piece of cake from a French bakery. In my opinion, this is a complete victory.
  • 2 thicker 6 inch layers: I completely understand if you don’t want to cope with 3 6 inch cakes and all that icing. Fortunately, this dish also works wonderfully in two pans. Simply extend the baking time for the somewhat thicker cakes by roughly 8 minutes!
  • 1 9 x 9 inch sheet cake: With a single layer of icing on top, this recipe makes a lovely 9 x 9 inch square sheet cake. Sheet cake is one of my favorite desserts since it’s simple to make, share, and eat!

I suggest double the recipe if you want to create this pistachio cake in normal 8 or 9 inch circles! You’ll either get two hefty layers or three somewhat thinner layers!

Ingredients

in order to make the pistachio cake

  • pistachios, 3/4 cup, pounded into tiny crumbs
  • 1 cup flour, all-purpose
  • a half teaspoon of salt
  • a quarter teaspoon of baking soda
  • 1 1/2 tablespoons powdered baking soda
  • 2 tblsp. oil (vegetable)
  • room temperature 1/4 cup unsalted butter
  • 3/4 cup sugar, granulated
  • 1 egg white and 1 egg yolk
  • 1 teaspoon extract de vanille
  • a quarter teaspoon of almond extract
  • 6 tbsp sour cream (or weird yogurt)
  • 6 tblsp. of milk

in order to make the cream cheese frosting

  • 6 oz. room temperature cream cheese
  • 3/4 cup softened butter
  • a half teaspoon of salt
  • vanilla extract (two tablespoons)
  • honey (two teaspoons)
  • 4 c. sugar (powdered)

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Three 6-inch cake pans should be greased and floured. Remove from the equation.
  2. Pulse the pistachios in a food processor until they are broken down into fine bits. It’s OK if the powder isn’t entirely powdered, but the bits must be extremely little.
  3. In a mixing dish, combine the pistachios, flour, baking powder, baking soda, and salt. To blend, stir everything together. Remove from the equation.
  4. Combine the butter and oil in a stand mixer fitted with the whisk attachment and beat until smooth. Add the granulated sugar and continue to beat until the mixture is light, fluffy, and pale in color. On medium high, mix in the egg and egg white, vanilla extract, and almond extract until light and fluffy and pale in color.
  5. Combine the sour cream and milk in a small mixing bowl and stir to combine. Don’t overmix the ingredients.
  6. Finally, mix the dry ingredients into the wet until no flour streaks remain.
  7. Using a spatula, evenly distribute the batter across the prepared pans. Bake for 20-25 minutes, or until a knife inserted in the center comes out largely clean. Allow to cool fully before using.
  8. Make the cream cheese icing while the cakes are cooling. Cream the butter and cream cheese in a stand mixer fitted with a paddle attachment until light and fluffy, approximately 2 minutes. Whip for another minute to include the vanilla essence, salt, honey, and powdered sugar.
  9. Place the first cake on a platter and spread a generous amount of frosting on top. Place the second and third layers on top of the first, frosting in between each. Finish by sprinkling the leftover icing around the exterior of the cake.
  10. Pistachio bits should be sprinkled around the edges of the cake, carefully pressed into the icing with your hands. Decorate the top of your cake with fresh fruit, pistachio crumbs, or a drizzle of honey, if desired. Enjoy!

  1. This recipe yields a three-layer, six-inch cake. If you want to create a three-layer 8- or 9-inch cake, double the recipe by two.
