Pecan cookie bars

Pecan cookie bars are a classic, but it’s hard to find someone who has never had them. They’re easy to make, simple ingredients that all go into the oven at once and come out looking like little golden brown balls of deliciousness.

These easy pecan bars are the perfect addition to any holiday gathering. They’re just as delicious as they are simple, and you’ll have them ready in no time.

 

I first had these pecan cookie bars during Thanksgiving this year, when a cousin of one of my friends brought them for dessert, and I’ve been itching to recreate them ever since.

 

It differs from a regular pecan pie in that the crust is more cookie-like than shortbread-like. It’s fantastic.

Ingredients

  • cream cheese, 8 oz
  • 3/4 cup softened butter
  • 1 cup sugar (granulated)
  • 2 1/4 cup flour (all-purpose)
  • 1/2 teaspoon bicarbonate of soda
  • 2 teaspoon vanilla extract
  •  
  • For the pecans, follow these steps:

  • 1 tablespoon of butter
  • 2 eggs
  • 1 cup brown sugar, tightly packed
  • 2/3 cup corn syrup (light)
  • 3 cups pecans, chopped
  • 1 teaspoon vanilla extract

Instructions

  1. In a large mixing bowl, beat cream cheese, 3/4 cup butter, granulated sugar, and 2 teaspoon vanilla extract on medium speed until completely combined. Mix in the flour and baking soda well. Cover. Refrigerate for 30 minutes before serving.
  2. Preheat the oven to 350 degrees Fahrenheit. Firmly press dough into the bottom of a 15x10x1 inch baking pan that hasn’t been oiled. Bake for 15 minutes, or until golden brown. In a medium mixing bowl, melt the remaining 1/4 cup butter. Combine the eggs, brown sugar, corn syrup, and the remaining 1 teaspoon vanilla extract in a mixing bowl. Mix until everything is properly combined. Add the pecans and mix well.
  3. Evenly spread the pecan mixture across the heated crust. Bake for another 25-30 minutes, or until the topping is hard around the edges but soft in the middle. On a wire rack, cool fully. To serve, cut the cake into 60 bars.
