January is traditionally the month when individuals concentrate on eating well. However, in my view, winter need rich, delectable food to get us through the frigid months. It’s merely a matter of science.

So, although I’ll be posting some excellent healthy recipes on the site this month, my main focus will be on comfort food. Food that warms you up on the inside. Food that makes you want to take off your work clothes, put on your sweatpants, and sit on the sofa with a huge dinner while watching the new winter TV schedule.

Of course, as a food blogger, my work attire is sweatpants, but I’m an exception. 

On a chilly night, what could be better than a big cup of hot chocolate? PEANUT BUTTER HOT CHOCOLATE, that’s all. And what’s even better? It’s also vegan.

No one will be able to tell. No one will realize that this vegan hot chocolate is prepared with almond milk since it is so thick and creamy. It’s all about the presentation when it comes to vegan hot chocolate. I poured peanut butter over the inside of the cup in addition to a teaspoon of peanut butter incorporated into the drink, making the thickest and most delicious hot chocolate ever.

What is the best way to prepare vegan hot chocolate?

It’s really easy to create this peanut butter hot chocolate. For this vegan hot chocolate recipe, I used almond milk, but you may use whatever milk you prefer (non-dairy or otherwise). Just remember that the milk should be unsweetened and have a taste that complements both the chocolate and the peanut butter. To prevent a sugar overdose, skip the agave in this recipe if you only have sweetened non-dairy milk on hand.

Pour the almond milk into a saucepan over low heat to produce this smooth vegan hot chocolate. Heat the almond milk until it is blistering hot, but not boiling. To prevent accidently scorching the milk, stir it often. Then add the agave, cocoa powder, and vanilla extract, along with the chopped dark chocolate (make sure it’s dairy-free). After the chocolate has melted, remove from the heat and whisk in the creamy peanut butter.

In the microwave, melt a bit extra peanut butter and spread it inside the jar or cup you’ll be serving this hot chocolate in. Fill your cup halfway with vegan hot chocolate and top with tiny marshmallows. If you’re feeling fancy, burn the marshmallows to gently brown them, or just eat them plain!

Ingredients

To prepare the hot chocolate

  • 1 1/2 cups almond milk, unsweetened
  • 1.5 ounces dark chocolate, chopped (dairy-free preferred)
  • 1 tblsp. agave nectar
  • 1 tbsp chocolate powder
  • a few drops of vanilla extract
  • 1 tbsp puffed rice

Toppings

  • 1 tbsp puffed rice
  • 1/4 cup small vegan marshmallows (such as Dandies)

Instructions

  1. Heat the milk in a small saucepan over low heat until it is scorching but not boiling.
  2. Combine the chopped chocolate, agave nectar, cocoa powder, and vanilla extract in a mixing bowl. Stir until the chocolate is completely melted. Take the pan off the heat and whisk in the peanut butter.
  3. In a small dish, microwave 1 tablespoon peanut butter for 15-20 seconds, then sprinkle up and down the edges of a cup. Pour in the hot cocoa and sprinkle the marshmallows on top. Toast marshmallows with a tiny torch or cook for 30 seconds under the broiler!
