Buckle up, kids, because we’ve got a treat in store for you today. And it’s made with all of your favorite ingredients, like marshmallows, chocolate, graham crackers, and… drumroll please… PEANUT BUTTER. Is it just me, or do you always spread a good dollop of peanut butter on your s’more? If you’ve never tasted it, you’re losing out big time. It’s the ideal salty sweet balance for the sugary s’mores taste. To be honest, it’s definitely one of my favorite three taste combinations, and I can’t believe it’s taken us this long to make these delectable s’mores bars.

You’re going to enjoy these because they’re toasted, gooey, marshmallowy, nutty bliss.

Tips for making the greatest s’mores bars using peanut butter

  • If you were cooking a normal s’more, you’d spend the additional money on excellent graham crackers, Hershey’s chocolate, and the fluffiest marshmallows. These s’mores bars with peanut butter are no exception. Collect the items you’d need to make a s’more, then crush them into your cookie bars!
  • Overmixing the batter will result in gooey, fudgy bars, so simply mix until everything is just mixed. This is not the time to beat anything until it’s light and fluffy, or to overmix, since this might lead the batter to become excessively gluten-rich.
  • Underbake them slightly: No one loves a cookie that is overbaked, and cookie bars are no exception. The marshmallows will help keep these bars ooey gooey, but for a genuinely fudgy peanut butter s’mores bar, bake them until they’re firm on the sides and puff up, but still a little gooey in the centre. Nothing will be raw since they’ll continue to bake as they cool, resulting in a flawlessly soft cookie bar!

Ingredients

  • room temperature 1/4 cup unsalted butter
  • 1/2 cup peanut butter (natural)
  • 3/4 cup sugar (brown)
  • 1 room temperature egg
  • 1 cup flour, all-purpose
  • graham cracker crumbs (about 3/4 cup)
  • 1/2 teaspoon bicarbonate of soda
  • a quarter teaspoon of salt
  • 2/3 cup chocolate (we used Hershey’s bars cut up, but any chocolate would do!)
  • a third of a cup of small marshmallows

Instructions

  1. Preheat the oven to 350°F and prepare a square pan with parchment paper (9 x 9 or 8 x 8 would suffice). Remove from the equation.
  2. Combine the butter and peanut butter in a stand mixer fitted with the paddle attachment and beat until smooth. Don’t overmix the ingredients.
  3. Mix in the brown sugar well. Scrape down the sides of the basin and whisk together the egg and vanilla essence. Mix until everything is well blended.
  4. Add the flour, graham cracker crumbs, baking soda, and salt after scraping down the bowl. Mix until all of the flour has been incorporated and no streaks of flour remain.
  5. Fold the marshmallows and chocolate chunks into the batter once or twice to evenly distribute them. Pour the batter onto the prepared baking pan and smooth it out into an equal layer.
  6. Bake for 20–30 minutes, or until the sides are golden brown and a knife inserted in the center comes out largely clean. Allow it cool completely before cutting into 16 slices. Enjoy!
