A chocolate peanut butter banana bread, to be precise, or a rich, moist banana bread baked with peanut butter and cocoa powder. Then we discovered we’d already completed the task! So we prepared it again to “reshoot”… but to be quite honest, we simply wanted to eat it again.

It tastes like a cake, but the peanut butter and ripe bananas provide the majority of the moisture… So you’re into healthy eating? YES.

Ingredients

To make the bread

  • 1/3 cup gently melted peanut butter
  • 1 pound of sugar
  • 1 cup bananas, mashed
  • a half cup of vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup flour (all-purpose)
  • 1/2 cup cocoa powder
  • 1 teaspoon bicarbonate of soda
  • a half teaspoon of salt
  • slices of banana (optional)

Drizzle with peanut butter

  • 3 tbsp peanut butter (creamy) (Natural isn’t an option; it won’t function.) Skippy was used, and it melted well!)

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Using parchment paper, line a big loaf pan. Remove from the equation.
  2. Combine the slightly melted peanut butter, sugar, mashed bananas, vegetable oil, and eggs in a large mixing bowl. After mixing, add the cocoa powder, baking soda, salt, and vanilla. Last but not least, add the flour.
  3. Pour into a loaf pan and top with banana slices that have been finely cut. For this, I used half a banana. Preheat the oven to 350°F and bake for 55 minutes, or until a knife inserted in the middle of the loaf comes out clean. Allow to cool for 20 minutes on a wire rack.
  4. Spread peanut butter on top of the loaf when it has cooled somewhat. Melt for 30 seconds in a microwave-safe basin, then whisk. It should become somewhat runny and creamy. Heat for an additional 15 seconds, depending on your microwave. Drizzle the glaze over the bread. Serve!
