Peanut Butter and Jelly Yogurt Parfaits

Yogurt and peanut butter are a perfect match. But what happens when you combine the two? This recipe has all the flavor of your favorite dessert with less than half the calories.

The “copycat belvita(cranberry orange)” is a delicious and healthy yogurt parfait recipe that consists of peanut butter, jelly, and granola. It is a perfect snack for the summer.

Granola cooked from scratch is one of my favorites. It’s extremely healthy, especially when you add your own nuts, grains, and other ingredients.

My favorite way to eat homemade granola is in a Peanut Butter and Jelly Yogurt Parfait. People, peanut butter and jelly isn’t only for lunch.

Peanut butter and jelly is, in my opinion, one of the best meal combinations ever. All of the flavors of sweet, salty, and richness are combined in one delectable mouthful. I’d eat two peanut butter and jelly sandwiches on white bread every day if I could.

But for the time being, I’ll just have my pb&j for breakfast, which is quite wonderful in and of itself. I stacked protein-rich Greek yogurt, peanut butter, and jelly on top of a homemade Peanut Butter and Honey Granola that’s irresistible a.f.

You might also use fresh fruits like blackberries or blueberries for the jelly, depending on your tastes. Alternatively, you may use half jelly and half fruit.

Also, if you missed Sunday’s article, The Foodie’s Guide To Israel, I strongly advise you to do so (sure, I’m biased, but who wouldn’t want to view food photos x100)!

for the granola with peanut butter and honey

  • a quarter-cup of coconut oil
  • 13 cup roasted honey peanut butter
  • 2 tsp vanilla extract (pure)
  • 1 tablespoon honey
  • a quarter teaspoon of salt
  • a quarter teaspoon of cinnamon
  • 3 cups oats, old fashioned
  • chia seeds (2 tblsp.)
  • 1/2 cup coarsely chopped almonds
  • 1/2 cup pastry flour (whole wheat) (optional)
  • almond milk (two tablespoons) (optional)

in order to produce parfaits (makes 2)

  • 2 cups greek yogurt (plain, non-fat)
  • peanut butter (two tablespoons) (my fave is the honey roasted from Whole Foods)
  • jam (2 tablespoons)
  • 1 cup granola with peanut butter and honey (from above)

prepare the granola with peanut butter and honey

  1. Preheat the oven to 350 degrees Fahrenheit. Using parchment paper, line a cookie sheet. Remove from the equation.
  2. Combine coconut oil, honey roasted peanut butter, vanilla extract, honey, salt, and cinnamon in a large mixing bowl. Combine the oats, chia seeds, and almonds in a mixing bowl. Stop here if you’re looking for a great gluten-free granola. Fold in whole wheat pastry flour and almond milk for a crunchier granola.
  3. Spread the granola evenly on the prepared cookie sheet. Cook for 20-25 minutes, stirring halfway through to ensure consistent cooking. When the granola is golden brown, it’s ready. Allow for thorough cooling before using. You’ll use part of the granola in the parfaits, but the rest will stay for weeks in a mason jar or plastic bag! This recipe yields around 1 pint.

to put the parfaits together

  1. Pour 1/2 cup greek yogurt into the bottom of each mason jar with care. Spread 1/2 tablespoon peanut butter and jelly on top, then sprinkle 1/4 cup oats on top. Repeat. Isn’t that simple?

It is hard to go wrong with a classic peanut butter and jelly sandwich, but this recipe for “yogurt parfait” will have you craving more. Reference: yogurt parfait recipe.
