  • Peanut Butter: This is self-evident. Hehe. I’ve tested this recipe with both natural and Jiff peanut butter, and they both turn out great!
  • Granulated Sugar: I’ve used both brown sugar and granulated sugar in this recipe, and they both work!
  • If you want the greatest results, make sure you’re using pure vanilla extract. A little goes a long way when it comes to making gourmet peanut butter and jelly cookie bars.
  • All-Purpose Flour: For these peanut butter and jelly bars, regular all-purpose flour will suffice. Make sure you’re measuring your flour correctly by spooning it into a measuring cup and leveling it off to ensure you’re not overdoing it!

These peanut butter and jelly bars are one of my favorites since they’re quick and simple to create. These three steps will ensure that you always have the ideal peanut butter and jelly dessert, even if you’re a newbie baker.

  1. Do not overmix the shortbread mixture: A crumbly crust is essential for delicate, buttery shortbread. The more you mix your shortbread mixture, the more gluten forms, resulting in a tough cookie crust. Before going into the oven, the dough will be dry and crumbly, but I guarantee it will bake up into a delicious and soft peanut butter shortbread.
  2. Use good jam since the coating of jam in these peanut butter and jelly bars is THICK. And a thin coating of delectable jam prepared with genuine fruit and high-quality ingredients will simply not compare to a thick layer of delectable jam created with real fruit and high-quality ingredients.
  3. Underbake the bars: If I were to provide one baking advice to the world, it would be to always underbake your baked products. Because baked items continue to bake as they cool, removing them from the oven before they are completely cooked will result in them being overdone by the time they cool. When the jam is bubbling and the sides are a light golden brown, but the centre is still little raw, you know these pb and j bars are done.

Ingredients

  • 1/2 cup softened unsalted butter
  • 3/4 cup peanut butter (creamy)
  • 1/2 cup sugar (granulated)
  • 1 teaspoon extract de vanille
  • 2 cups flour (all-purpose)
  • salt (1/4 teaspoon)
  • 3/4 cup jam (or whichever jam you like!)

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Set aside a 9 × 9 pan lined with parchment paper on both sides.
  2. Combine the butter, peanut butter, sugar, flour, salt, and vanilla in a stand mixer fitted with the paddle attachment and beat until the dough begins to come together, approximately 2 minutes. The dough will be crumbly, which is exactly what you want it to be!
  3. 2/3 of the shortbread dough should be pressed into an even layer in the prepared pan. Spread the jam on top in a uniform, thick layer. Crumble the remaining shortbread over the jam, leaving a few dots of jam showing through. Preheat the oven to 350°F and bake the bars for 25-30 minutes, or until golden brown.
  4. Allow the shortbread to cool completely before cutting it into the appropriate size and shape. Enjoy!
