Ingredients

  • 1 pea pesto recipe
  • pasta (8 ounces)
  •  2/3 cup water for spaghetti
  • 1 cup peas, fresh
  • 4 oz. burrata cheese
  • season with salt and pepper to taste

Instructions

  1. Bring a big saucepan of water to a rolling boil. Prepare the pasta according to the package guidelines. Remember that you’ll need some pasta water after it’s done cooking, so don’t simply drain it.
  2. While the pasta is cooking, create the pesto sauce in a food processor or blender according to the instructions. Remove from the equation.
  3. Strain the pasta when it has finished cooking, reserving 2/3 cup starchy pasta water.
  4. Return the pasta to the saucepan in which it was cooked. Combine the pesto, peas, and roughly half of the pasta water in a mixing bowl. Toss everything together–I prefer to do this with tongs! If the pesto is too thick and the pasta isn’t uniformly coated, add extra pasta water. Cook for 2 minutes over medium heat, or until the pesto thickens and adheres to the pasta.
  5. Divide the spaghetti among four plates and top with an ounce of burrata and freshly grated parmesan cheese for each meal. Enjoy while it’s still hot!
