I’ve always thought of myself as a bit of a zealot. In other words, more is better. Everything with all the chocolate, sugar, sprinkles, candy bars, and other goodies. After all, if you’re going to eat a cookie, why not make it the most luxurious, enjoyable treat you can? It’s either go big or go home. We went all out with these funfetti cookies, which were packed with an entire golden Oreo.

They’re a maximalist’s dream come true.

Advice on how to make the greatest funfetti oreo cookies

  • Chill the dough for the cookies: Chilling the dough allows the flavors to settle in. It will also aid in the thickening of the funetti cookies and prevent them from spreading too much. We suggest chilling the dough balls for at least an hour, if not overnight!

Ingredients

  • room temperature 3/4 cup unsalted butter
  • brown sugar, 2/3 cup
  • 2/3 cup sugar, white
  • 1 teaspoon extract de vanille
  • a quarter teaspoon of almond extract
  • 1 room temperature egg + 1 egg yolk
  • 2 1/4 cup flour (all-purpose)
  • a quarter teaspoon of baking soda
  • a half teaspoon of salt
  • rainbow sprinkles (1/2 cup)
  • 12 Oreo biscuits

Instructions

  1. Beat the room temperature butter, brown sugar, and white sugar until light and fluffy in a stand mixer fitted with the whisk attachment, approximately 3 minutes.
  2. Scrape down the sides of the bowl and add the vanilla, almond, egg, and egg yolk. For approximately 1 minute, beat until everything is thoroughly incorporated.
  3. Mix in the flour, baking soda, and salt until well mixed. Remove the bowl from the stand mixer, scrape the sides, and sprinkle the rainbow sprinkles on top. To evenly spread the sprinkles, fold the dough in half.
  4. To make dough balls, use a 2 ounce cookie scoop. 2 inches appear on two parchment paper-lined cookie sheets. Each ball should be flattened between your hands. Place one Oreo cookie in the center of the dough and fold the dough around it. To make a circular ball, roll the dough between your palms. Carry on with the remaining cookies in the same manner.
  5. Refrigerate the trays for at least an hour or overnight to set. Preheat the oven to 350°F when you’re ready to bake the cookies. Bake for 11 to 13 minutes, or until the rims are golden brown but the centers are still soft.
  6. Allow the cookies to cool completely before consuming them.
