  • 1 cup sugar (granulated)
  • 2 big room-temperature eggs
  • orange zest, a sprinkle
  • 3/4 cup extra virgin olive oil of excellent grade
  • vanilla extract (two tablespoons)
  • 2 Tablespoons all-purpose flour + 1 cup all-purpose flour

  1. Preheat the oven to 350 degrees Fahrenheit and line an 8 or 9-inch round baking pan with parchment paper. Remove from the equation.

  4. Stir in the dry ingredients (all-purpose flour, almond flour, baking powder, and salt) until smooth. Don’t overmix the ingredients. Finally, carefully fold in the berries.
  5.  Bake for 45-55 minutes, or until the cake is a light golden brown and a knife inserted into the center comes out largely clean. Enjoy with a dusting of powdered sugar!
