Ingredients

  • room temperature 1/2 cup unsalted butter
  • 1/2 cup sugar (granulated)
  • 1/4 cup packed brown sugar
  • vanilla extract (two tablespoons)
  • 1 room temperature egg
  • 1 cup oats, old fashioned
  • 1 cup flour, all-purpose
  • 1/2 teaspoon bicarbonate of soda
  • a quarter teaspoon of baking powder
  • a quarter teaspoon of salt

for the coating of fudge

  • a half-cup (half a 14 ounce can of sweetened condensed milk)
  • 1/2 cup chocolate chips (semisweet)
  • 1 tblsp butter (unsalted)
  • salt (1/4 teaspoon)
  • 1 teaspoon extract de vanille

Instructions

  1. Preheat the oven to 350°F and line an 8-inch square pan on both sides with parchment paper. Remove from the equation.
  2. Beat the butter and sugars together in a stand mixer fitted with the paddle attachment until light and fluffy, approximately 2 minutes. Scrape down the sides of the basin and whisk in the vanilla extract and eggs until well mixed.
  3. Combine the oats, flour, baking soda, baking powder, and salt in a separate dish and stir well. Combine the dry and wet ingredients in a mixing bowl and stir until well blended.
  4. Scrape down the sides of the bowl, then divide the cookie dough in half. Set aside half of the dough and press it into an equal layer in your prepared pan.
  5. To make the fudge layer, combine all of the ingredients in a mixing bowl. Stir together the sweetened condensed milk, chocolate chips, and butter in a saucepan over medium heat. Blend everything together until it’s totally smooth. Remove the pan from the heat and add the salt and vanilla essence. The finished product will be shiny and thick.
  6. Using an offset spatula or a spoon, spread the fudge mixture over the oatmeal cookie layer. Over the fudge mixture, crumble the remaining cookie dough, leaving some fudge uncovered.
  7. Preheat the oven to 350°F and bake the oatmeal bars for 20 to 30 minutes, or until golden brown. Allow it cool fully before slicing and dishing into 16 bars.
