Ingredients

  • 2 quarts heavy cream (whipped)
  • 1 tbsp extract de vanille
  • 12 teaspoon of salt
  • sweetened condensed milk, 14 ounces
  • 10 oz. strawberries (fresh or frozen)
  • 1 frozen cheesecake, defrosted and cut into pieces (we purchased ours at Trader Joe’s!).

Instructions

  1. Set aside two 8-inch circles lined with parchment paper.
  2. In a large sauce pan, defrost the frozen strawberries and then liquefy them using an immersion blender (or a regular blender). Allow to cool fully before serving.
  3. Whip the heavy cream in a mixing bowl with a whisk attachment until medium peaks form. Combine the vanilla essence and salt in a mixing bowl.
  4. Pour the sweetened condensed milk and strawberries over the cream and gently mix until everything is combined. Fold the cheesecake bits into the ice cream until everything is well combined.
  5. Before serving, put it in the freezer for at least 12 hours.
